Peanut Butter Eclair Cake

Spray the bottom of a 9x13 pan with cooking spray
- 1 box chocolate graham crackers (there will be a few graham crackers left over)
- 2 (3 1/4-ounce) boxes vanilla instant pudding
- 1 cup peanut butter
- 3 1/2 cups milk
- 1 (8-ounce) container Cool Whip, thawed
- 1 can chocolate frosting
Hot Spiced Punch (RS December 2009)

Bring first 4 ingredients to a boil and simmer 15 minutes
- 22 C water
- 2 1/2 C sugar
- 3 sticks of cinnamon
- 12 whole cloves
- Bring these to a boil. Then simmer 15 minutes.
- Add: 12 oz frozen orange juice
- 1/3 C lemon juice
- 3 C pineapple juice
Chicken and Asparagus Lemon Stir-fry

Made this for dinner tonight
- 1 1/2 lb chicken breasts cut into cubes
- Kosher salt, to taste
- 1/2 cup reduced sodium chicken broth
- 2 Tb reduced-sodium soy sauce
- 2 tsp cornstarch
- 2 Tb water
- 1 Tb olive oil, divided
- 1 bunch asparagus, trimmed and cut into 2-inch pieces
- 6 cloves garlic, chopped
- 1 Tb fresh ginger
- 3 Tb fresh lemon juice
- fresh pepper to taste

The Best Key Lime Pie Recipe
- Graham Cracker Crust:
- 7 T butter, melted
- 11 full Graham Crackers (to make just about 2 C graham cracker crumbs
- 1/4 C sugar
- 1/4 t. sea salt
- Pie Filling:
- 1 1/2 T Zest from key limes (reserve a pinch of this zest as an optional sprinkling on top of the pie)
- 3 egg yolks
- 1 can (14 oz) Sweetened and Condensed Milk
- 3/4 C key lime juice (from approximately 1 pound of key limes)
- For Whipped Cream:
- 1C (*8oz) Heavy Cream
- 1 1/2 T Sugar
Almond and Parmesan Baked Tilapia

Preheat oven to 425F/220C
- 3-4 Tilapia filets, thawed if frozen (This recipe will work best with pieces that are at least 1/2 inch thick.)
- 1/4 cup melted butter (I used half butter and half margarine)
- 1/3 cup almond meal (I use Bob's Red Mill Almond Meal
- 2 T finely grated Parmesan or Asiago cheese
- 1/2 tsp. garlic powder
- 1/4 tsp. pepper (or slightly more lemon pepper)
- 1/2 tsp. fish rub

- 1 pint raspberries (about 12 ounces), washed and dried (see note)
