Cilantro Lime Chicken with Avacado Salsa

Clean eating recipe from Natalie Hodson, Clapiers' cousin
- Salsa:
- 2 T fresh cilantro
- 2 1/2 T lime juice (~1 1/4 limes)
- 1 tsp extra virgin olive oil
- 1/4 t salt (optional)
- 4 chicken breasts
- 1 c chopped tomato (~1 – 1 1/2 lg tomato)
- 2-6 T chopped red onion (depending on how much you like the taste of onion in your salsa)
- 2 t. lime juice (3/4 of a lime)
- 1/8 t pepper
- 1 avocado, chopped and peeled

For the dressing, combine all ingredients in a pint sized glass jar and shake well to dissolve sugar
- 1/3 cup sugar
- 1 1/2 tablespoons poppy seeds
- 1 1/2 tablespoons sesame seeds
- 1/2 teaspoon paprika
- 2 teaspoons dried mustard
- 1 tablespoon minced sweet onion
- 1/2 teaspoon sea salt
- 1/4 teaspoon freshly ground black pepper
- 1/2 cup white balsamic vinegar
- 1/3 cup vegetable oii
- 1/3 cup extra virgin olive oil

For Cranberry Avacado Salad
- 5 cups sliced almonds, or a 1 pound package*
- 1/2 cup sugar
- 3 tablespoons butter
- 2 teaspoons cinnamon
- 1 teaspoon cumin*
- 1-1 1/2 teaspoons smoked paprika* - some smoked paprikas are quite hot, if you don't like "hot", just use 1 teaspoon and they will be mildly spiced.
- 1 teaspoon vanilla

- 2 T olive oil, plus 1 T reserved
- 1/2 C onion, chopped
- 3 cloves garlic, minced
- 1 lb. ground turkey
- 3 T sherry wine
- 1 C fresh baby spinach
- 2 whole tomatoes, diced
- 1 T dried basil (if you have fresh, use it!)
- 1/2 t dried rosemary (if you have fresh, use it!)
- 1/4 t red pepper flakes
- 1 t salt
- 1/4 t pepper
- 3/4 C grated parmesan cheese (pus extra for sprinkling)
