Sausage and Egg Casserole

Cook sausage and onion in large skillet until browned
- 1 1/2 lb Sausage (I used Bob Evans Sage last time and everyone like it)
- 1 pkg. (5 1/2 oz) herb seasoned croutons
- 2 cups shredded sharp cheddar cheese
- 2 cups shredded Pepper Jack cheese
- 1/4 minced onion
- 8 eggs, beaten
- 2 cups half and half cream
- 1 1/2 cups milk
- 1 1/2 tsp dry hot mustard
- chopped red and green pepper for garnish

- 6 lbs pork roast (shoulder/butt)
- 1 lg jar salsa
- 2 can coke

Dijon Tilapia Cakes

- 2 fillets of tilapia (1 pound)
- 1 cup mayonnaise
- 2 eggs
- 1 tablespoon Dijon mustard

- 5 frozen chicken breasts
- 1 can enchilada sauce
- 1 package taco seasoning
- 35-40 tortillas

Peanut Butter and Honey Popcorn

- 8 cups popped lightly salted popcorn (low-fat microwave popcorn is what I used)
- 1/2 cup sugar (I usually leave this out)
- 1/2 cup honey
- 1/2 cup peanut butter
- 1/2 teaspoon vanilla (optional, but I totally used it!)

Overbooked Praline Frosted Brownies

Made for Memorial Weekend 2013
- Brownies
- 1 box Duncan Hines milk chocolate brownie mix
- Water, Eggs & Vegetable oil as called for on the brownie mix box
- 1/2 c. chopped pecans
- Praline Frosting
- 1/2 c.whipping cream (in refrigeration section found next to the half & half)
- 6 Tbsp. butter
- 1 1/2 c. packed brown sugar
- 3/4 c. chopped pecans
- 1 1/2 c. powdered sugar
- 1 tsp. vanilla
Crock Pot Pizza Soup

Use a 5 or 6 quart crockpot for this recipe
- 1 jar (14 oz) of pizza sauce
- 3 empty jars full of water
- 1 green bell pepper, seeded and chopped
- 1/2 red onion, chopped
- 1 cup sliced mushrooms
- 1 cup baby tomatoes, cut in quarters (or 1 can diced tomatoes, drained)
- 2 already-cooked Italian sausage (I used chicken Italian sausage)
- 1 cup sliced pepperoni, sliced in quarters (Hormel turkey pepperoni is labeled gluten free)
- 8 fresh basil leaves, chopped (or 1/2 T dried)
- 1 T dried oregano
- 1/2 to 1/3 cup of dried pasta (if your pasta is tiny, use 1/3 cup. if it's big, do 1/2. I used 1/2 cup Trader Joe's brown rice penne)
- shredded mozzarella cheese (to add later)
