- 1 chicken breast (I used chicken tenderloins)
- 2 slices whole wheat bread
- 2 blue containers pecans
- 1/4 cup Dijon mustard
- 1 tsp honey
Chicken Avacodo Soup

- 2 chicken breasts
- 2 teaspoons olive oil
- salt & freshly ground pepper to taste
- 1 1/2 cups green onions, finely chopped, divided
- 1 teaspoon minced garlic
- 1 tomato, diced
- 3 - 14.5oz cans chicken broth
- 1/8 teaspoon cumin
- 1 teaspoon coarse kosher salt
- 2 avocados, diced
- 1/2 cup cilantro, finely chopped
- lime wedges
Winger's Chicken Salad

Delicious salad!
- SAUCE:
- CHICKEN: Tyson breaded chicken breast tenderloins - amount is per your choice.
- 3 T. Frank's Red Hot Wings Buffalo Hot Sauce
- 3/4 C brown sugar
- 2 T water
- RANCH SALAD DRESSING: Hidden Valley or Costco recommended
- Romaine lettuce
- Grape tomatoes
- Craisens
- Cheddar Cheese, or mix of monterrey cheddar, or whatever you like.
- Croutons - Linda uses Costco's focaccia croutons
Poppy Seed Glaze

- 1/2 t. butter flavoring
- 1/2 t. almond extract
- 1 1/2 t. vanilla
- 1/4 C. orange juice (diluted)
- 3/4 C. sugar
Fish Taco Cabbage Bowl

Low Carb *The rest of the fam ate this as regular tacos
- Ingredients:
- 3 large or 4 small fillets Tilapia or other mild white fish
- 2 tsp. + 2 tsp. olive oil
- 2 tsp. Szeged Fish Rub(or use other fish rub of your choice)
- 1 tsp. ground cumin
- 1/2 tsp. chile powder
- 1 medium head green cabbage, thinly sliced
- 1/2 medium head red cabbage, thinly sliced
- (You could also make this with pre-sliced coleslaw mix if you don't want to slice the cabbage.)
- 1/2 cup thinly sliced green onion (or more if you're a big green onion fan like I am)
- guacamole, for serving (completely optional, but I used Good Foods Tableside Chunky Guacamole, which was easy and good)
- Dressing Ingredients:
- 1/2 cup mayo (Or use a mix of mayo and Fat Free Greek Yogurt if you'd like a lighter option.)
- 2 T fresh-squeezed lime juice (I used my fresh-frozen lime juice)
- 2 tsp. Green Tabasco Sauce (more or less to taste)
- salt or Vege-Sal to taste (I used about 1/2 tsp. Vege-Sal.)

- 2 large (8 oz each) boneless, skinless chicken breasts
- Olive oil cooking spray, or 2 teaspoons olive oil
- 1/2 teaspoon kosher salt
- 1/4 teaspoon Freshly ground black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon dried oregano
- 1/4 teaspoon paprika

- 1 cup unsalted butter, at room temperature
- 3/4 cup brown sugar
- 1/4 cup granulated sugar
- 1 (3.4 oz) package butterscotch instant pudding mix
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 1/2 cups all-purpose Gold Medal flour
- 1 teaspoon baking soda

- 1 cup white chocolate chips

Breaded Garlic Chicken with Lemon Butter Sauce

- 4 boneless, skinless chicken breasts
- 1 cup seasoned flour (1 cup flour, 1 teaspoon salt, 1/2 teaspoon pepper)
- 5 cloves of garlic, finely minced (see garlic tutorial here)
- 1 tablespoon parsley flakes or 1/4 cup chopped fresh parsley
- 2 tablespoons freshly squeezed lemon juice, from about 1 lemon
- 3 eggs
- 1/3 cup finely grated Parmesan cheese
- 1 tablespoon olive oil
- 5 tablespoons butter
Avocado and Corn Salad with Cilantro Vinegarette

Place salad ingredients in bowl and refrigerate until ready to serve
- 5 Ears Corn, husk removed, brush with olive oil and grilled, remove corn with sharp knife
- 2 Avocado’s, diced and sprinkled with lemon juice to prevent browning
- 2 C. Tomatoes, red and yellow cherry variety or equivalent
- 1 Small red onion, finely diced
- 3/4 C. Feta, crumbled
- 1 1/2 C. English cucumber, skin on and chopped small diced
