- 1 3-4 lb beef roast
- 1 cup water
- 1 cup salsa
- 1 envelope onion soup mix
- 1 envelope Italian dressing mix
- 1 envelope Au Jus mix
- 1 pkg. King's Hawaiian Rolls
- Sliced Swiss cheese (1 slice per slider)

TexMex Crockpot Carnitas

It's not Cafe Rio, but it's still yummy
- 2-3 lbs pork (butt/shoulder works best)
- 1/4 c. diced yellow onions
- 1/4 c. diced green chiles (canned is okay)
- 1 tsp. fresh minced garlic
- 1 1/4 c. (1 small can) diced tomatoes
- 1 tbsp cumin
- 2 tsp onion powder
- 2 tsp chili powder
- 1 tsp garlic powder
- 1/2 tsp. salt
- 1 tbsp agave/honey
- 2 tsp. lime juice
- 2 tbsp. orange juice
- 1/2 c. barbecue sauce

Apple Butternut Squash Soup

- 1 cup white onions, minced
- 2 oz. whole butter
- 1 Tbsp. curry powder
- 1 tsp. fresh ground white pepper
- 1 lb. carrots
- 1 gallon vegetable stock
- 5 lbs. butternut squash, diced
- 1 qt. heavy cream
- 1 Tbsp. fresh lemon juice
- 1/4 cup light brown sugar
- 2 lbs. Idaho potatoes, peeled and diced
Pomegranate Salsa
