Hasselback Sweet Potatoes

Preheat oven to 400 Wash and peel the sweet potatoes 3/4 of the way, leaving some peel on the bottom of the potato
- 2 sweet potatoes
- 2 tablespoons Earth Balance butter substitute (chopped in little pieces)
- 2 tablespoons applesauce
- 2 tablespoons maple syrup
- 1/4 cup chopped pecans
- 1/4 cup dried cranberries
- 1/4 cup peeled and finely diced apple
- 1/2 teaspoon cinnamon
- 1 pinch salt
- Olive oil

This is the most delicious soup ever! Whenever I make it I get tons of compliments
- 2 (14 oz) cans diced tomatoes, with juice
- 1 cup finely diced celery
- 1 cup finely diced carrots
- 1 cup finely diced onions
- 1 tsp dried oregano or 1 T fresh oregano
- 1 T dried basil or 1/4 cup fresh basil
- 4 cups chicken broth
- 1/2 bay leaf
- 1/2 cup flour
- 1 cup Parmesan cheese
- 1/2 cup butter
- 2 cups half and half, warmed (or skim milk if you’re trying to cut some calories)
- 1 tsp salt
- 1/4 tsp black pepper

Crock pot chicken and bottle of marinade on low for 6 hours
- 16 oz Farfalle pasta
- 1 cup heaving whipping cream
- 4-6 chicken breasts

1. The night before serving, pour 1/4 c
- 1/4 c. plus 2 TBSP chipotle salsa, pureed (I like Herdez brand)
- 1 large boneless, skinless chicken breast
- 2 avocados
- zest and juice of one lime
- 2 TBSP red onion, finely minced
- 1 clove garlic, pressed or finely minced
- 1 Roma tomato, seeds removed, finely chopped
- 2 TBSP fresh cilantro, minced
- 1/2 jalapeno pepper, seeds and ribs removed, finely minced (optional)
- 1/4 tsp. cumin
