Vanilla Pudding Chocolate Chip Cookies

A variation on the traditional cookie from Pinterest
- 1 cup unsalted butter, at room temperature
- 3/4 cup brown sugar
- 1/4 cup granulated sugar
- 3.4 oz. package vanilla instant pudding mix
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups semi-sweet chocolate chips
Lemon Crinkles

Preheat oven to 350 degrees
- 1/2 cup (8 tablespoons) butter, softened
- 1 cup granulated sugar
- 1/2 teaspoon vanilla extract
- 1 large egg
- 1 teaspoon freshly grated lemon zest (probably used closer to 2 tsp)
- 1 tablespoon freshly squeezed lemon juice, from about 1/2 lemon
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
- 1/8 teaspoon baking soda
- 1 1/2 cups all-purpose flour
- 1/2 cup powdered sugar
Chicken Parm Meatballs

In a large bowl, gently mix together first 11 ingredients
- 1 1/4 pounds ground chicken
- 1/2 cup breadcrumbs
- 2 tablespoons chopped onion
- 1 tablespoon chopped parsley
- 1/2 cup Pecorino (or Parm)
- salt to taste
- pepper to taste
- 1 clove garlic, minced
- 1 teaspoon fennel seeds
- 1 egg, whisked
- zest of half a lemon
- 3 tablespoons olive oil
- 1 14-ounce can storebought pizza sauce (such as Don Pepino’s)
- 4 about 4 ounces fresh mozzarella

- 1/4 cup sour cream (I used fat free)
- 2 Tbsp chili sauce
- 2 tsp creamy horseradish sauce (I used Kraft)
San Francisco Pork Chops

- 2 tablespoons extra-virgin olive oil
- 4 pork chops, about 1-inch thick
- Salt and pepper for seasoning
- 2 cloves garlic, finely minced
- 1/4 cup reduced-sodium soy sauce
- 1/4 cup low-sodium chicken broth
- 2 tablespoons packed light brown sugar
- 1/4 teaspoon red pepper flakes
- 1 tablespoon cornstarch
- 1 tablespoon cold water
- Mashed Potatoes or Hot Cooked Rice (for serving)

- 1 to 1 1/2 pounds boneless skinless chicken breast
- salt and pepper
- 1/2 cup diced onion
- 1/2 teaspoon minced garlic
- 1/2 cup Dijon mustard
- 2/3 cup honey
- 2 tablespoons salted butter
- 1 sprig fresh rosemary
- Green onion or dried chives for garnish
Chicken Chile Verde Nachos

The meat is cooked in the crockpot and can be eaten alone, in tacos or enchiladas, or as my kids liked, on nachos!
- CHICKEN:
- 2 lbs tomatillos husked, washed and dried, and cut in half
- 10 medium Anaheim peppers, cut in half, seeds removed
- 1 jalapeño pepper
- 1 cup diced onion
- 4 garlic cloves
- 2 cups roughly chopped cilantro
- 1 tablespoon cumin
- 1 teaspoon paprika
- Zest of 1 lime
- Juice of 1 lime
- 1/2 teaspoon sugar
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups chicken broth (I didn't add the broth because I wanted it a little more dry for nachos)
- 2 lbs boneless skinless chicken breast
- Whatever toppings you want for your nachos, tacos....
