- 1 tsp. butter
- 4 cups fresh corn kernels (from about 8 ears)
- 1/2 cup sour cream
- 2 Tbl. grated parmesan cheese
- 1 Tbl. chopped fresh basil
Easy Chicken & Cheese Enchiladas

Stir the soup, sour cream, picante sauce and chili powder in a medium bowl
- 1 can Cream of Chicken Soup
- 1/2 cup sour cream
- 1 cup Pace Picante Sauce
- 2 tsp. chili powder
- 2 cups chopped cooked chicken
- 1/2 cup shredded Monterey Jack Cheese
- 6 flour tortillas, warmed
- 1 small tomato, chopped
- 1 green onion, sliced
Panko Chicken with Fennel and Tomatoes

Place flour in a bowl. Place egg substitute in another bowl
- 1/3 cup all purpose flour
- 1/2 cup egg substitute (or 2 whole eggs, beaten)
- 1 1/3 cups panko bread crumbs
- 1 Tbl. dried oregano
- 1/4 tsp. salt
- 1 tsp. paprika
- four , 6oz. boneless skinless chicken breats, pounded to 1/2 inch thickness
- 3 Tbl. olive oil
- Vegetables
- 2 fennel bulbs, trimmed and thinly sliced
- 2 Tbl. olive oil
- 4 medium garlic cloves, minced
- 1/8 tsp. dried pepper flakes
- 1/4 tsp. salt
- 2 cups grape tomatoes, halved
- olive oil for drizzling
- 1/2 oz. Parmesan or Asiago cheese, shaved

- 1 tsp. ground cumin
- 1/2 tsp. salt
- 1 1/2 Tbl. olive oil
- 1/2 cup chicken broth
- 2 Tbl. lime juice
- 2 Tbl. chopped fresh cilantro
Southwest Cheesy Chicken Spaghetti**

Preheat oven to 350 degrees
- 1 cup cream of chicken
- 1 lb. skinless, boneless chicken breast
- 1 tsp. pepper
- 1 Tbl. garlic powder
- 1 lb. whole wheat spaghetti
- 16 oz. 2% milk Velvetta cheese (cubed)
- 4 oz. green chilies
- 1 cup salsa Verde
- 1 Tbl. dried cilantro
- 1/2 cup fat-free milk
Meatball Soup***

Mix all ingredients and cook on low 3-5 hours
- 1 can stewed tomatoes
- 2 cans Veg-all
- 1 8oz. can tomato sauce
- 3 cans diced tomatoes
- 1 can corn
- onion, diced
- Meatballs
- Worcestershire sauce, couple of dashes
- Bay leaf
- Brown sugar
- 2-3 cans diced potatoes
Cucumber Salad****

Combine ingredients in a large bowl and mix well
- 3 medium cucumbers, peeled and sliced 1/4 thick
- 1 medium onion, sliced and separated into rings
- 3 medium tomatoes, cut into wedges
- 1/2 cup vinegar
- 1/4 cup sugar
- 1 cup water
- 2 tsp. salt
- 1 tsp. fresh coarse ground black pepper
- 1/4 cup oil
Spaghetti Salad***

Cook spaghetti and drain in cold water
- Dressing:
- l lb. box thin spaghetti
- 1 carrot, finely chopped
- 1 onion, finely chopped
- 1 green pepper, finely chopped
- Pepperoni
- 1 cup sugar
- 1/2 cup oil
- 1 tsp. celery seed
- 2 Tbl. unseasoned rice vinegar

1. Combine buttermilk and paprika in a large ziploc plastic bag
- 1/3 cup reduced fat buttermilk
- 1/8 tsp. paprika
- 12 oz. boneless skinless chicken breast tenders (about 8 to 10 pieces)
- 1/3 cup twig-shaped bran cereal
- 1/3 cup panko bread crumbs
- 1 Tbl. dry onion soup mix
- salt to taste (optional)
