- Extra virgin olive oil
- 1 teaspoon garlic, finely chopped
- 1 teaspoon chili pepper, finely chopped
- Bolognese Sauce
- hot water
- Marinara Sauce
- sea salt, to taste
- 1 teaspoon fresh parsley, finely chopped
- 3 fresh basil leaves, torn or chopped
- freshly ground black pepper, to taste
- cooked pasta, linguine
- parmesan cheese, freshly grated
Crawfish Etouffee

Use a saucepan with a tight fitting lid to etouffee, (French for smother)
- 1 lb. cleaned crawfish tails, commercial kind
- crawfish fat and water to make 3/4 cup
- 1 heaping tablespoon tomato paste
- 1 stick margarine or butter
- 1 medium onion, chopped fine
- 1 heaping teaspoon all purpose flour
- 1 tablespoon parsley
- 1 teaspoon salt
- 2 very thin slices lemon
- 1/4 teaspoon cayenne pepper
- 1 tablespoon green onion

I like Creamed Chipped Beef from my Army days
- 3 tbsp. unsalted butter
- 1/2 lb. paper-thin dried beef slices, shredded
- 3 tbsp. unbleached all-purpose flour
- 2 cups whole milk
- 1 cup half-and-half
- 1/8 tsp. freshly milled white pepper
- 1 tbsp. minced fresh chives
- Pinch of freshly grated nutmeg
- 4 –6 slices toast
- 1 tbsp. minced fresh parsley

- 2 tablespoons olive oil
- 1 thinly sliced medium onion
- 2 tablespoons chile paste
- 2 15-ounce cans white hominy, rinsed
- 8 cups turkey stock or low-sodium chicken broth
- 2 cups shredded cooked turkey meat
- Salt and pepper
- Tortilla chips, cilantro sprigs, shredded lettuce, sliced radishes, crumbled oregano and lime wedges for serving

- 2 tbsp tomato paste
- 1/4 cup pineapple juice (from the pineapple chunks can - see below)

- 1 tbsp honey

- For the skewers:
- 2 chicken breasts, cut into 1 inch cubes

- 2 tablespoons vegetable oil
- 3 medium onions, minced
- 6 medium garlic cloves, minced or pressed through a garlic press (about 2 tablespoons)
- 1/4 cup chili powder
- 1/4 cup tomato paste
- 1 tablespoon ground cumin
- 1/2 teaspoon red pepper flakes
- Salt
- 1 (28-ounce) can diced tomatoes
- 2 (15.5-ounce) cans dark red kidney beans, drained and rinsed
- 1 (28-ounce) can tomato puree
- 3 tablespoons soy sauce
- 1 tablespoon minced fresh oregano leaves, or 1 teaspoon dried
- 1 tablespoon brown sugar
- 2-4 teaspoons minced chipotle chiles in adobo sauce (see note)
- 2 pounds 85 percent lean ground beef

- 1/4 L / 1 cup milk or water
- 20 g / 0.7 oz sugar

- Additional Ingredients for filled dumplings:
- 1 kg / 2 lbs plums or apricots
- cubed sugar

- 150 g / 5.2 oz bread crumbs
- brown or regular sugar
