  • 8 ounces cooked sausage, chopped
  • 4 ounce can mushroom stems and pieces, drained
  • 2 ounce pimiento strips, diced and drained
  • 4 ounces cave aged Gruyere Swiss cheese, shredded
  • 1/3 cup shallots, finely chopped
  • 4 eggs (room temperature), slightly beaten
  • 1 1/2 cups heavy or whipping cream (room temperature)
  • 1 teaspoon sea salt
  • 1/4 teaspoon fresh ground black pepper
  • 1 teaspoon dried thyme, leaves
