- 4 pounds beef oxtails, cut into 1½ to 2-inch pieces, trim fat
- 2 gallons cold water, approximately
- 1 piece ginger root, 3-inch unpeeled
- 1 large onion, halved and unpeeled
- 1/3 cup fish sauce, Vietnamese Nuoc Mam
- 1 tablespoon salt
- 8 whole star anise
- 5 whole cloves
- 1 stick cinnamon, 3-inch piece broken into 1-inch pieces
- 1 teaspoon fennel seeds, lightly crushed
- 3 bay leaves
- 1 pound rice noodles, medium or thick
- 1 pound fillet Mignon, trimmed of fat and very thinly sliced
- For The Garnish:
- 2 bunches scallions, thinly sliced
- 1/2 cup cilantro leaves, whole, roughly chopped
- 1/2 cup basil, fresh, Thai Basil, regular Basil if Thai unavailable
- 1 1/2 cups mung bean sprouts
- 3 large limes, cut into wedges

Buttermilk Fried Chicken

My family loves fried chicken
- 2 chickens, cut into serving pieces
- 1 quart buttermilk
- 2 cups all-purpose flour
- 1 tablespoon kosher salt
- 1 tablespoon freshly ground black pepper
- oil or shortening (Crisco Solid Shortening is Good)
Baked Beans (Slow Cooker)

Soak beans overnight in a large bowl
- 1 pound navy beans, about 2 1/2 cups
- 5 cups water
- 5 or 6 pieces of bacon, diced, or about
- 1/4 pound salt pork, sliced
- 1 Cup tomato juice
- 1/2 cup chopped onion
- 1/4 cup ketchup
- 1/4 cup sorghum molasses or regular molasses
- 1/4 cup brown sugar
- 1/2 teaspoon dry mustard
- 1 1/2 tsp. salt
- 1/4 tsp. black pepper
- 1 tsp. chili powder

- 2 pounds red potatoes, cut into 2 inch pieces (you can peel them but I never do - I love red potato skins in my mashed potatoes!)
- 1/2 cup sour cream (or plain greek yogurt)
- 1/4 cup milk
- 2 teaspoons salt
- 1 teaspoon black pepper

- 3 egg yolks
- 1 cup brown sugar
- 1/2 cup white sugar
- 1 Tablespoon butter
- 3 Tablespoon cornstarch
- 1/4 teaspoon salt
- 1/4 cup vinegar
- 2 cups boiling water

In a food processor, puree onion, carrots, celery, and garlic into a coarse paste
- 1 large onion or 2 small, cut into 1-inch dice
- 2 large carrots, cut into 1/2-inch dice
- 3 ribs celery, cut into 1-inch dice
- 4 cloves garlic
- Extra-virgin olive oil, for the pan
- Kosher salt
- 3 pounds ground chuck, brisket or round or combination
- 2 cups tomato paste
- 3 cups hearty red wine
- Water
- 3 bay leaves
- 1 bunch thyme, tied in a bundle
- 1 pound spaghetti
- 1/2 cup grated Parmigiano-Reggiano
- High quality extra-virgin olive oil, for finishing
