Slow Cooker Chili

In my home during the cold winter months I make chili about once every other week
- Serve topped with:
- 1 Tbsp olive oil
- 2 lbs lean ground beef
- 1 large yellow onion, finely chopped
- 3 cloves of garlic, finely minced
- 2 (14.5) oz cans diced tomatoes with green chilies*
- 3 (8 oz) cans tomato sauce
- 1/2 cup water or beef broth
- 2 Tbsp chili powder
- 2 1/2 tsp ground cumin
- 2 tsp paprika
- 2 tsp cocoa powder
- 1 tsp granulated sugar
- 1/2 tsp ground coriander
- Salt and freshly ground black pepper, to taste
- 1 (15 oz) can dark red kidney beans, drained and rinsed
- 1 (15 oz) can light red kidney beans, drained and rinsed
- Cheddar and Monterey Jack cheese, sour cream, chopped red or green onions, cilantro, roasted peppers, or hot sauce
- Optionally serve with:
- fresh cornbread or biscuits, baked russet potatoes, saltine crackers or tortilla chips
Marinara Sauce

You need this marinara sauce to cook my favorite Gourmet Italia dishes
- extra virgin olive oil
- 1 tablespoon garlic, chopped fine
- 1 tablespoon chili pepper, chopped fine
- 3 large canned tomatoes, Italian
- 5 fresh basil leaves, chopped fine
- 1 tablespoon fresh parsley, chopped fine
- sea salt, to taste
Bekah’s Chicken Salad

Season chicken with salt and pepper on both sides
- 1 pound boneless skinless chicken breast or thighs
- 2 tablespoons olive oil
- up to 1 cup mayonnaise
- 1 teaspoon paprika
- 1 1/2 cups dried cranberries, chopped
- 1 cup celery, thinly sliced
- 2-3 green onions, thinly sliced
- 1 cup green bell pepper, minced
- 1 cup chopped pecans, walnuts and almonds
- 1 teaspoon seasoning salt or you can use regular/sea/pink salt
- ground black pepper, to taste
- 1/2 – 3/4 of an apple, chopped in small pieces
Thom's "Bowl of Red"

No one ever seems to agree on the best way to make the most authentic "bowl of red"
- Optional Ingredients:
- 2 pounds lean ground beef
- 2 large garlic clove, minced
- 1 large red onion, finely chopped
- 1 bell pepper, finely chopped
- 2 jalapenos, finely chopped
- 7 tablespoons chili powder
- 1 teaspoons salt
- 1 teaspoons paprika, or (to taste)
- 1/2 teaspoon Tabasco pepper sauce, or (to taste)
- 16 ounces tomato sauce
- 2 cups water or beef broth
- 28 ounces canned tomatoes pureed
- 1 tablespoon sugar
- 4 tablespoons cilantro
- 2 tablespoons masa corn flour, or (masa harina)
- 1 large red onion, chopped, (optional)
- 2 jalapeno, chopped (optional)
- 8 ounces Monterrey Jack cheese, shredded (optional)
- 8 ounces sharp cheddar cheese, shredded (optional)
- 2 cups cooked pasta (optional)
- 2 cups cooked rice (optional)
- 1 (15 oz.) can red kidney beans, drained & rinsed (optional)
Quick Tomato Soup

Variations: Creamy Tomato Bisque: add ½ pint whipping cream
- 2 teaspoons extra virgin olive oil
- 1/2 cup yellow onion, chopped
- 29 ounces premium diced tomatoes in puree
- 1/4 cup chopped fresh basil
- 2 cups vegetable or chicken stock
- 1/2 teaspoon crushed red pepper flakes
- kosher salt, to taste
- Coarsely grated Parmesan cheese, optional
Bubble and Squeak

Heat butter in a 10-inch heavy nonstick skillet over moderately high heat until foam subsides
- 1 lb cooked potatoes (any kinds will work) sliced or mashed
- 3/4 stick (6 tablespoons) unsalted butter
- 1 lb cooked cabbage, roughly chopped
- salt and pepper to taste
Easy Bean Soup

This is the easiest of recipes and it is very tasty
- 1 pound of mixed dry beans/peas/lentils
- 8 ounces turkey Italian teaspoon freshlysausage cut into slices
- 1 large onion, chopped
- 2 tablespoons oil
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 4 garlic cloves, minced
- 1 can (15 ounces) diced tomatoes
- 1/4 teaspoon crushed red pepper flakes
- 2 bay leaves
- 1/4 teaspoon freshly ground black pepper
- 8 cups of chicken stock
- salt, to taste (start with 1 teaspoon)
- Grated Parmesan cheese, for serving
The Best Fried Chicken Recipe Ever

To make the brine: Stir kosher salt into cold water until dissolved
- 1/2 cup kosher salt (do not use table salt for brining)
- 2 quarts cold water
- 1 three-pound chicken, cut into 8 pieces
- 1 quart buttermilk
- 1 pound lard
- 1/2 cup (1 stick) unsalted butter
- 1/2 cup country ham pieces, or 1 thick slice country ham cut into 1/2-inch strips
- 1 cup all-purpose flour
- 2 tablespoons cornstarch
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper

- 4 pounds lump crabmeat, cleaned
- 1 1/2 cups green pepper, chopped
- 2 cups yellow onion, chopped
- 3 eggs
- 1 cup mayonnaise
- 3 tablespoons Worcestershire sauce
- 2 teaspoons granulated garlic
- 2 teaspoons baking powder
- 1 teaspoon bay seasoning
- 1 teaspoon Tabasco sauce

You have got to try making this! This dish makes multiple appearances at our dinner table and I have used several ...
- Chicken Marinade:
- 2 pieces of uncooked chicken breast (1 lb) (you can choose to leave them whole or cube them and brown in a pan first)
- 1 400 grams/14 ounces package of fresh Lo Mein noodles or cook 4 ounces of dry egg or pasta noodles of your choice (lo mein, chow mein, spaghetti, vermicelli, etc.)
- 2 cups or 1 bunch of baby bok choy, washed and sliced
- 1 medium carrot, peeled and chopped or shredded into matchsticks
- 2 cloves garlic, minced
- 1 teaspoon fresh ginger, minced
- salt and pepper to taste
- 2 teaspoons of low sodium soy sauce or tamari
- 1/4 teaspoon of sesame oil
- 1/2 teaspoon of potato or corn starch
- optional dash of black pepper or 1/4 teaspoon of chili garlic paste (sambal oelek)
- Sauce:
- 1/2 cup low sodium chicken broth
- 1.5 - 2 Tablespoons oyster flavored sauce or vegetarian flavored oyster sauce
- 2 Tablespoon low sodium light soy sauce or Tamari
- 2 teaspoons of honey or sugar
- 1 teaspoon of dark soy sauce
- 1 teaspoon of sesame oil
- 1/2 Tablespoon of Mirin or Chinese Cooking Wine (Shaoxing wine)
- 1-2 teaspoons of chili garlic paste (sambal oelek), red pepper chili flakes or Sriracha sauce - optional for a spicy kick
- Starch Slurry:
- 2 - 3 tablespoons of potato or cornstarch (depending on how thick you want the sauce)
