Brunswick Stew

This recipe leaves out the chicken and adds more brisket
- 2 large onions, chopped
- 2 garlic cloves, minced
- 1 tablespoon vegetable oil
- 1 1/2 tablespoons jarred beef soup base (Add one box of beef broth OR add another 2 cups of water in with the 1 1/2 tablespoons beef soup base...to make sure there is enough liquid in the soup)
- 2 pounds skinned and boned chicken breasts
- 1 (28-oz.) can fire-roasted crushed tomatoes (OR 2 14-oz cans)
- 1 (12-oz.) package frozen white shoepeg or whole kernel corn
- 1 (10-oz.) package frozen cream-style corn, thawed
- 1 (9-oz.) package frozen baby lima beans
- 1 (12-oz.) bottle chili sauce
- 1 tablespoon brown sugar
- 1 tablespoon yellow mustard
- 1 tablespoon Worcestershire sauce
- 1/2 teaspoon coarsely ground pepper
- 1 pound chopped barbecued beef brisket; without sauce (We used 2 pounds)
- 1 tablespoon fresh lemon juice
- Hot sauce (optional)
Curry Chicken Pot Pie

Preheat oven to 400 degrees F
- 4 cups frozen vegetable mix, peas, carrots
- 1 to 2 tablespoons canola oil
- 3 tablespoons butter
- 1 cup chopped onion
- 1 cup chopped celery
- 1 1/2 cups low sodium chicken broth
- 1/2 cup milk
- 3 tablespoons flour
- 1 teaspoon curry powder
- 2 tablespoons dried parsley
- 1 teaspoon salt
- 1/2 teaspoon fresh ground pepper
- 2 cups cubed cooked chicken
- 1 package puff pastry
Gaida's Chicken Parmesan

This is a Chicken Parmesan recipe that will become a family favorite
- SIMPLE TOMATO SAUCE:
- 3 tablespoons olive oil
- 1 teaspoon chopped fresh rosemary leaves
- 1 teaspoon chopped fresh thyme leaves
- 1 teaspoon chopped fresh Italian parsley leaves
- Salt and freshly ground black pepper
- 8 (3 ounces each) chicken cutlets
- 1 1/2 cups marinara sauce, or Simple Tomato Sauce (below)
- 1/2 cup shredded mozzarella
- 16 teaspoons grated Parmesan cheese
- 2 tablespoons unsalted butter, cut into pieces
- 1/2 cup extra-virgin olive oil
- 1 small onion, chopped
- 2 cloves garlic, chopped
- 1 stalk celery, chopped
- 1 carrot, chopped
- Sea salt and freshly ground black pepper
- 2 (32 ounce) cans crushed tomatoes
- 4 to 6 basil leaves
- 2 dried bay leaves
- 4 tablespoons unsalted butter, optional
Seared Scallops

Remove the small side muscle from the scallops, rinse with cold water and thoroughly pat dry
- 1 to 1 1/4 pounds dry sea scallops, approximately 16
- 2 teaspoons unsalted butter

Parmesan Risotto - Carrabba's Italian Grill

This is a basic risotto that we serve as a side dish
- 5 cups reduced-sodium chicken broth
- 2 tablespoons unsalted butter
- 1 small yellow onion, finely chopped
- 1 2/3 cups (8 ounces) Arborio rice
- 1/2 cup (2 ounces) freshly grated Parmesan cheese
- Kosher salt and freshly ground black pepper
RED BEANS AND RICE 3

The quintessential New Orleans dish, traditionally served on Mondays
- 1 pound red kidney beans, dry
- 1 large onion, chopped
- 1 bell pepper, chopped
- 5 ribs celery, chopped
- As much garlic as you like, minced (I like lots, 5 or 6 cloves)
- 1 large smoked ham hock, 3/4 pound of Creole-style pickle meat (pickled pork), or 3/4 lb. smoked ham, diced, for seasoning
- 1 to 1-1/2 pounds mild or hot smoked sausage or andouille, sliced on the bias
- 1/2 to 1 tsp. dried thyme leaves, crushed
- 1 or 2 bay leaves
- As many dashes Crystal hot sauce or Tabasco as you like, to taste
- A few dashes Worcestershire sauce
- Creole seasoning blend, to taste; OR,
- red pepper and black pepper to taste
- Salt to taste
- Fresh Creole hot sausage or chaurice, links or patties, grilled or pan-fried, one link or patty per person (optional)

Heat oil in a Dutch oven, over a medium flame
- 1/2 cup oil
- 1/2 cup flour
- 1 cup onion, minced
- 1 cup celery, minced
- 1 cup green bell pepper, minced
- 1/2 teaspoon paprika
- 1/2 teaspoon thyme
- 1 teaspoon garlic, minced
- 2 cups tomato concasse
- 1/4 pound smoked summer sausage, small dice
- 5 cups chicken broth
- 1/2 teaspoon file powder
- 1/2 pound shrimp, shelled and deveined, raw
- 1/4 pound lump crabmeat, picked
- 3 cups rice, hot cooked
Dinner Tonight: Sichuan-Style Chicken Noodle Soup

Leeks and mushrooms make up the base, with some soy sauce and rice wine adding a nice depth
- 1 leek, cleaned, ends trimmed, hard green parts discarded, and thinly sliced
- 4 shiitake mushrooms, stems removed, thinly sliced

- 2 pounds yellow squash
- 1 medium chopped onion
- 1 cup cracker crumbs
- 1/2 teaspoon salt
- 1 cup grated cheddar cheese
- 3 teaspoons butter
- 1/2 cup milk
- 1 egg
