Red Beans and Rice

This is my favorite Red Beans and Rice recipe! I always get compliments on this delicious dish
- 1 pound dried red beans, rinsed and sorted over
- 3 tablespoons bacon grease
- 1/4 cup chopped tasso, or chopped ham
- 1 1/2 cups chopped yellow onions
- 3/4 cup chopped celery
- 3/4 cup chopped green bell peppers
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- Pinch cayenne
- 3 bay leaves
- 2 tablespoons chopped fresh parsley
- 2 teaspoons fresh thyme
- 1/2 pound smoked sausage, split in half lengthwise and cut into 1-inch pieces
- 1 pound smoked ham hocks
- 3 tablespoons chopped garlic
- 10 cups chicken stock, or water
- 4 cups cooked white rice
- 1/4 cup chopped green onions, garnish

- 1 cup vegetable oil
- 1 1/2 cups all-purpose flour
- 2 1/2 cups finely chopped onion
- 1/4 cup minced garlic (about 12 cloves)
- 10 cups Rich Shrimp Stock (store-bought or use the recipe in the book)
- 2 bay leaves
- 1 1/4 teaspoons freshly ground black pepper
- 3/4 teaspoon cayenne
- 2 teaspoons chopped fresh thyme leaves
- 1 1/2 tablespoons kosher salt
- 3 large baking potatoes (2 1/2 to 3 pounds), peeled and cut into 2-inch pieces
- 2 pounds small or medium shrimp, peeled and deveined
- 1/4 cup chopped green onion, green part only
- 2 tablespoons chopped fresh parsley leaves
- Steamed long-grain white rice, for serving

- 1/2 cup butter, softened
- 1 cup brown sugar
- 1/4 cup milk
- 1 teaspoon vanilla
- 3 1/2 cups sifted powdered sugar
Slow Cooker German Lentils with Sausage

Place lentils in slow cooker
- 1 pound dried brown lentils, picked over, rinsed & drained
- 10 cups chicken stock or broth
- 1 pound grated carrots (or less, depending on your preference)
- 2 tablespoons minced garlic
- 1 teaspoon Worcestershire sauce
- 1/4 teaspoon hot pepper sauce
- 1 bay leaf
- 2 tablespoon dried parsley (or 1/2 cup fresh chopped parsley)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon celery salt
- 1/2 teaspoon freshly ground black pepper
- 1/4 teaspoon ground nutmeg
- 1 to 2 cups of cubed kielbasa sausage (or ham)
- Apple cider vinegar for serving, optional

This past week I made Chinese food and that always makes me happy
- 2 tbsp oil
- 1 onion, minced
- 2 celery stalks, sliced
- 1 carrot, peeled and sliced
- 2 garlic cloves, minced
- 2 cups fresh sliced mushrooms
- 4 cups fresh bean sprouts
- 2 tbsp water
- 2 tbsp soy sauce
- 1 tbsp rice wine
- 1/2 tsp sugar
- 2 tsp corn starch
Creamy Italian Chicken Tomato Soup

I really can’t say enough about this Creamy Italian Chicken Tomato Soup
- 3 large boneless skinless chicken breasts
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 (14 ounce) can coconut milk (full fat)
- 1 cup chicken broth
- 1 (14 ounce)can diced tomatoes (add the juice)
- 1 8 ounce can tomato sauce
- 2 tablespoons Italian seasoning
- 1 tablespoon dried basil
- 1/2 teaspoon sea salt (more to taste)
- fresh ground pepper to taste
Ruby Tuesday's White Chicken Chili

My wife and I always have a cup of this chili each time we eat at Ruby Tuesday's
- 6 C. Chicken stock
- 1 lb. Bag Great northern Beans (soaked in water overnight)
- 2 medium Spanish Onions, chopped
- 6 C. diced cooked Chicken
- 2 Jalapeno peppers, seeded diced
- 2 diced chili peppers
- 1 ½ tsp. Oregano
- 2 tsp. Cumin
- 1/2 tsp. Cayenne Pepper
- 2 Garlic cloves, minced
- 1 C. Salsa
- 1 Tbsp. Vegetable oil
- Salt to taste
Tomato Quiche

* Pie crust should be partially baked
- 1 (9 inch) pie crust, * see note above
- 2 tablespoons olive oil
- 1/2 cup chopped onions
- 1/2 cup green bell peppers, chopped
- 1 garlic clove, minced
- 2 pounds tomatoes
- 1/2 teaspoon basil
- 1/2 teaspoon oregano
- 1/2 teaspoon salt
- 3 tablespoons tomato paste
- 3 tablespoons fresh parsley, chopped
- 1/8 teaspoon black pepper
- 4 large eggs, ** see note above
- 12 black olives, sliced
- 1/3 cup grated Parmesan cheese
- 8 anchovies, optional
- Serve as an appetizer or with a salad for lunch.

- 2 Pound Of Boneless Skinless Chicken Breast
- 1 Red Or Yellow Bell Pepper Diced Fine
- 1 Green Bell Pepper Diced Fine
- 1 Sweet Purple Onion Diced Fine
- 1 Small Package Frozen Broccoli Flowerets Thawed
- 2 Tablespoons Soy Sauce
- 2 Tablespoons Fish Sauce
- 1 Teaspoon Table Salt
- 1 Teaspoon Black Pepper
- 1 Tablespoon Light Brown Sugar
- 1 Tablespoon Fine Ground Fresh Garlic
- 1 Teaspoon Cayenne Pepper Fine Ground

- Ingredients for empanadas:
- 2 cups all purpose flour
- 1 tsp. salt
- 2 tbsp. cooking oil
- 2 1/2 tbsp. vodka
- 1/2 cup water
- Ingredients for filling:
- 2 russet potatoes
- 1/2 onion, chopped
- Ground chorizo
- Oaxaca or cheddar cheese or a combination of the two
- Salt, pepper to taste
- Oil for frying
