  • 2 quarts water
  • Salt, to taste
  • 4 medium ears fresh corn
  • 2 tablespoons olive oil
  • 1 cup shallots, chopped
  • 2 tablespoons tomato paste
  • 2 teaspoons fresh thyme, minced, divided
  • 1/3 cup dry sherry
  • 1 roasted red bell pepper, coarsely chopped
  • 3/4 teaspoon salt, or to taste
  • Black pepper, freshly ground
  • 2 tablespoons fresh parsley, minced
  • 2 to 4 tablespoons lemon juice, fresh squeezed, to taste
