Native American Catfish

- 4 catfish fillet
- 1/4 cup pine nuts, toasted, ground
- 2 tablespoons pine nuts, toasted, whole for garnish
- 1/2 cup yellow corn meal
- 1/4 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon cayenne pepper
- 1/4 teaspoon cumin, ground
- 1/4 cup vegetable oil

To prepare the kababs: 1
- FOR THE KABABS:
- 2 lbs. Boneless mutton
- 3 tbs. Brown onion
- 2 tbs. Brown garlic; (30 g)
- 3 tbs. Ginger-garlic paste
- 2 tbs. Raw papaya paste; (30 g)
- 2 teaspoons Cumin powder; (10 g)
- 2 teaspoons Garam masala powder; (10 g)
- 4 teaspoons Chopped coriander leaves
- 1 teaspoon Mace-cardamom powder; (5 g)
- Salt to taste
- 1 cup Gramflour (Chickpea); roasted
- FOR THE SAUCE:
- 2 lbs. Mutton bones
- 3 tbs. Brown onion
- 2 tbs. Ginger-garlic paste; (30 g)
- 1 tsp. Whole garam masala; (5 g)
- 2 tbs. Oil; (30 ml)
- Salt to taste
- 1 1/2 tsp. Curd
- 3 tbs. Tomato ketchup
- 1 tbs. Kashmiri chili powder; (15 g)
- 1 tsp. Cumin powder; (5 g)
- 1 tsp. Garam masala powder; (5 g)
- MIX FOR THE FILLING:
- 6 Egg yolks; hard-boiled
- 50 g Dry plums; minced

I’m positive that this isn’t an original thought, merely original to me
- 1 lb. large shrimp, peeled
- 3 tablespoons olive oil
- salt and pepper
- 1 6-ounce container of pesto sauce (or homemade)
- 1 lb. penne pasta
- 1 15.5-ounce can Cannellini beans, drained and rinsed
- 1/2 cup sliced almonds
- 1/4 cup shredded Parmesan Reggiano cheese and additional for serving
Twice-Baked New Potatoes

Preheat the oven to 375 degrees F
- 12 new potatoes
- 2 tablespoons olive oil
- 1 1/2 cups grated Monterey Jack cheese
- 4 ounces cream cheese, softened
- 1/2 cup sour cream
- 1 tablespoon finely minced fresh chives
- 1 clove garlic, pressed
- Salt and pepper
Crawfish Bisque

Any Bisque is good whether it is made with lobster, crab, fish, or crawfish
- 1 1/2 cup crawfish tails
- 1 1/2 pint cold water
- 1/4 cup cooking oil
- 1 pint cold water mixed with ½ cup crawfish fat
- 1/4 cup all-purpose flour
- 1 teaspoon salt
- 1 small onion, chopped
- 1/4 teaspoon sugar
- 1 stick celery, chopped
- 1/4 teaspoon red pepper
- 1 clove garlic, mashed
- 1 tablespoon green onion
- 1 bay leaf
- 1 tablespoon chopped parsley
- 3/4 cup whole tomatoes, canned or fresh, chopped

- 1 cup sugar
- 1 cup milk
- 1 beaten egg

Crockpot Bacon Cheeseburger Soup

Start by sauteing onions and browning your beef together, until meat is no longer pink
- 1 lb ground beef (or soy crumble for vegetarians)
- 1 cup onions, diced
- 2 cups shredded sharp cheddar cheese
- 1 can (14.5 oz) diced tomatoes
- 5 strips of bacon, cooked and crumbled (or soy bacon for vegetarians)
- 1/2 cup celery, chopped
- 1 cup carrots, shredded
- 2 cups potatoes, cubed
- 8 oz cream cheese, cubed
- 4 cups chicken broth (or veggie broth for vegetarians)
- 1/4 cup flour
- 1 cup milk
- 3-4 garlic cloves, minced
- 1 tsp salt
- 1/2 tsp pepper
- 1 tsp dried basil
- 1 tsp dried parsley

Place each veal cutlet in between 2 pieces of plastic wrap and pound using the spiky side of a meat mallet
- Four 5-ounce veal cutlets, pounded 1/8_inch thick (about 11 inches long and 3 inches wide)
- Kosher salt and freshly ground pepper
- 1 cup all-purpose flour
- 2 tablespoons German hot mustard
- 3 eggs
- 2 cups plain dried breadcrumbs
- 1/2 cup canola oil
- 1/2 cup unsalted butter
- 1/4 cup fresh flat-leaf parsley, roughly chopped
- 1 lemon, cut into wedges
French Onion Grilled Cheese

For the caramelized onions: Heat a large heavy-bottomed pot over medium-high heat
- Caramelized Onions:
- 2 tablespoons unsalted butter
- 1 tablespoon olive oil
- 3 large yellow onions, in 1/4-inch slices from root to tip
- Salt and freshly cracked black pepper
- 1/4 cup dry sherry
- 1 teaspoon finely chopped fresh thyme
