Smokin' Potato Salad

Preheat a grill to medium heat
- 2 pounds Yukon gold potatoes
- 2 tablespoons canola oil, plus more for grill
- 2 teaspoons smoked paprika
- Kosher salt and fresh cracked black pepper
- 1 cup small diced celery
- 1/2 small red onion, finely diced
- 1 tablespoon minced fresh cilantro
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 1 teaspoon yellow mustard
- 2 teaspoons chopped capers
- 1/2 lemon, juiced
Rum Cheesecake Shots

BLEND all ingredients except cookie crumbs in blender until smooth
- 3/4 cup half-and-half
- 2 Tbsp. rum
- 1 tub (8 oz.) PHILADELPHIA Cream Cheese Spread
- 1/2 cup sugar
- 12 NILLA Wafers, crushed (about 1/3 cup)
Avocado Egg Salad

Combine all the ingredients in a large bowl and mash together with a fork
- 4 hard-boiled eggs
- 1 large avocado, cubed as you see above
- 2 tablespoons mayonnaise

- Pinch of salt and pepper

- 8 oz. Cream Cheese
- 1/4 c. butter, softened
- 1 c. powdered sugar
- 1/2 tsp vanilla
Tortilla-Chicken Skillet Casserole

In an extra-large skillet heat oil over medium-high heat
- Crushed tortilla chips or broken tostada pieces
- 1 tablespoon vegetable oil
- 1/3 cup chopped onion
- 2 cloves garlic, minced
- 1 teaspoon dried Mexican oregano or regular oregano, crushed
- 2 14 1/2 ounce cans diced tomatoes, undrained
- 1 - 2 canned chipotle chile peppers in adobo sauce, finely chopped,* plus 1 tsp. of the adobo sauce
- 1 14 1/2 ounce can reduced-sodium chicken broth
- 2 cups shredded cooked chicken
- 1/4 teaspoon cracked black pepper
- 1 cup crumbled queso fresco, Cotija, or feta cheese (4 oz.)
- Fresh cilantro sprigs
- 1/4 cup light sour cream
- 1 tablespoon fat-free milk
