Sun-dried Tomato Warm Potato Salad

1. Combine potatoes and salt in large stockpot and cover with with water
- 3 pounds small new potatoes (about 2-inch diameter), scrubbed
- 1 teaspoon salt
- 1/2 pound applewood smoked bacon, diced
- 1 1/2 cups finely chopped red onions
- 1/3 cup diced oil-packed, sun-dried tomatoes, drained
- 1 tablespoon whole-grain mustard
- 2 garlic cloves, minced
- 1/4 cup chopped parsley
- 1/3 cup apple cider vinegar
- Coarsely ground black pepper
Pecan Sandies

Preheat oven to 375 degrees F (190 degrees C)
- 1 cup butter, softened
- 1 cup vegetable oil
- 1 cup white sugar
- 1 cup confectioners' sugar, sifted
- 2 eggs
- 1 teaspoon vanilla extract
- 4 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon cream of tartar
- 1 teaspoon salt
- 2 cups chopped pecans
Grilled Sweet Potatoes with Lime and Cilantro

Parcook the potatoes: Place in a pot of water and boil until fork-tender; let cool

- 1 cup quinoa, uncooked
- 1 can (14.5 oz.) fat-free reduced-sodium chicken broth
- 1 can (15 oz.) black beans, rinsed
- 1 can (11 oz.) corn, drained
- 1 red pepper, chopped
- 5 green onions, sliced
- 6 slices baked cooked Ham, finely chopped
- 1/2 cup Italian Dressing

Oven-Fried Potato Wedges

- 3 large baking potatoes
- 1/2 cup mayonnaise
- 1/2 teaspoon hot sauce
- 1/2 teaspoon salt
- 1/2 tsp. garlic powder
- 1/4 teaspoon black pepper
- 2 cups cornbread dressing mix

- 1 (16 ounce) can refried beans
- 4 (8 inch) flour tortillas
- 3/4 cup fresh salsa
- 1/2 cup shredded Cheddar cheese
