Crash Hot Potatoes

Bring a pot of salted water to a boil
- 12 whole New Potatoes (or Other Small Round Potatoes)
- 3 Tablespoons Olive Oil
- Kosher Salt To Taste
- Black Pepper To Taste
- Rosemary (or Other Herbs Of Choice) To Taste
Cheesy Paprika Sweet Potato Casserole

Begin by placing both kinds of chopped potatoes in a pot and covering with water
- 3 medium all-purpose potatoes, or about 1 lb. potatoes of choice, peeled and cut into 1/2 to 1 inch pieces
- 3 medium sweet potatoes, (about 1 lb.) peeled and cut into 1/2 to 1 inch pieces
- 4 cups loosely packed fresh spinach leaves, well rinsed if freshly picked
- 1 lb ground beef
- 1 medium onion, chopped
- 1 3/4 teaspoons salt, divided
- 2 cups (16 oz) sour cream
- 8 oz cream cheese, softened
- 3 cloves garlic, minced
- 1 egg
- 2 teaspoons paprika, preferably smoked paprika
- 1/4 chipotle chile pepper, or additional paprika
- 1/2 teaspoon black pepper
- 2 2/3 cups shredded Cheddar or Colby Jack cheese, divided
- 4 to 5 slices bacon, fried till crisp and crumbled
Honey-Rum Black Beans

Preheat oven to 325 degrees F
- 1/2 pound chorizo sausage, diced
- 1 large Spanish onion, finely diced
- 1 large carrot, diced
- 4 cloves garlic, finely chopped
- 1 pound black beans, soaked, cooked until tender and drained well
- 1 cup dark rum
- 1/8 cup honey, or more to taste
- 1/8 cup molasses, or more to taste
- 3 tablespoons dark brown sugar
- Salt and freshly ground pepper
- 3 to 5 cups homemade chicken stock or low-sodium canned chicken broth
- 1/4 cup chopped fresh cilantro leaves, optional
Sambal Chicken Skewers

- 1/2 cup (packed) light brown sugar
- 1/2 cup unseasoned rice vinegar
- 1/3 cup hot chili paste (such as sambal oelek)
- 1/4 cup Sriracha
- 2 teaspoons finely grated peeled ginger
- 1 1/2 pounds skinless, boneless chicken thighs, cut into 1 1/2"-2" pieces
- Ingredient info: Hot chili paste is available at Asian markets and many supermarkets.
- Special equipment: 8 bamboo skewers soaked in water at least 1 hour
Bacon Candy

- 1/2 cup packed light brown sugar
- 1 1/2 teaspoons chile powder
- 20 slices of thick cut bacon (1 1/2 pounds)
Roasted Olives

- 1/4 cup orange juice
- 1 tsp. finely grated orange zest
- 1 tsp. Dijon mustard

- 1 can (14 oz.) fire-roasted diced tomatoes
- 1 can (14 oz.) kidney beans, rinsed and drained
- 1 can (14 oz.) fat-free refried beans
- 2/3 c. fine- to medium-ground cornmeal
- 2/3 c. all-purpose flour
- 1 tsp. baking powder
- 1 large egg
- 2/3 c. milk
- 2 serrano chiles, thinly sliced
