Bacon Jalapeno Cornbread

- 2 slices bacon, cut crosswise into 1/4-inch slivers

- 1 scant teaspoon table salt
- 2to 4 jalapeño peppers, seeded and finely chopped
- 1 cup coarsely grated pepper Jack cheese (4 ounces)
Cauliflower Onion Linguine

Bring a large pot of salted water to a boil
- Kosher salt
- 12 ounces linguine
- 4 tablespoons extra-virgin olive oil
- 2 cloves garlic, minced
- 1/4 cup panko (Japanese breadcrumbs)
- 1/2 cup fried onions, chopped
- 4 cups cauliflower florets, roughly chopped
- 1/2 to 1 teaspoon red pepper flakes
- 1/4 cup grated parmesan cheese, plus more for topping
- 2 tablespoons chopped fresh basil

Heart-Smart Refrigerator Bran Muffins

Mix cereal and wheat bran in a large bowl
- Cooking spray
- 2 cups All Bran cereal
- 2/3 cup wheat bran
- 1 1/3 cups boiling water
- 2 2/3 cup all purpose flour1 tablespoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/4 teaspoon grated or ground nutmeg
- 2 cups low fat buttermilk
- 1/2 cup pasteurized egg substitute
- 1 cup granulated sugar1/2 cup packed light brown sugar
- 1/2 cup vegetable oil
- 1 teaspoon vanilla extract

Preheat oven to 350 degrees
- Crumb layers:
- 11/2 c. oatmeal(old-fashioned or quick)
- 1 c. brown sugar
- 1 c. butter
- 11/2 c. flour
- 1 tsp. baking soda
- Filling:
- 1 can cherry pie filling
Chocolate Chip Shortbread

1. To basic sugar cookie dough, mix in 1/2 cup mini semisweet chocolate chips

- 1/2 cup mini semisweet chocolate chips

- To basic sugar cookie dough, mix in 1/2 cup mini semisweet chocolate chips. Form into one disk and refrigerate for 2 hours.

- Press into a 9-inch round fluted nonstick tart pan. Score into 16 pie-shaped wedges without cutting completely through dough.
- 3 .
- Bake at 350 degrees F for 27 to 30 minutes. Let cool and remove side of pan. Just before serving, melt 3 tablespoons seedless raspberry preserves and drizzle over top of tart. Cut into 16 wedges along score marks.
Bacon Wrapped New Potatoes

Preheat an outdoor grill for low heat, and lightly oil the grate
- 15 small new potatoes
- 5 slices bacon, cut into thirds
- 1 (1 ounce) package ranch dressing mix
- 15 toothpicks

- 2 cans (15 oz. each) sliced peaches in heavy syrup, drained
- 1/3 c. flour
- 1/3 c. firmly packed brown sugar
- 1/3 c. old-fashioned oats
- 1 tsp. cinnamon
- 1/4 c. butter
