Dinner Rolls

Combine water, milk, 3 tablespoons of the butter, sugar, salt and yeast in the bowl of a stand mixer
- 1/4 cup lukewarm water
- 1 cup warm milk (100-110F)
- 4 tablespoons unsalted butter, at room temperature, divided
- 2 tablespoons granulated sugar
- 1 1/2 teaspoons fine salt
- 2 1/4 teaspoons (1 packet) instant yeast
- 3 1/2 cups (15.43 ounces) unbleached all purpose flour
Chai Oatmeal

In a medium sized heavy saucepan over moderate heat, bring the water to a boil
- 4 cups water
- 1 ⁄2 teaspoon ground cardamom
- 1 ⁄2 teaspoon ground cinnamon
- 1 ⁄2 teaspoon ground ginger (or to taste)
- 1 ⁄4 teaspoon ground allspice
- 1 ⁄8 teaspoon ground cloves
- 1 pinch black pepper, ground
- 1 pinch sea salt
- 1 cup raw rolled oats (thick \"old fashion\" style)
- 1 ⁄4 cup butter
- 1 ⁄4 cup heavy whipping cream
- 2 teaspoons flax seed, ground
- raisins to taste (optional)
- 1 tablespoon honey ( (optional, or maple syrup)
- Milk (optional)
Devilish Sesame Chicken

In a large saucepan, heat 1 tablespoon oil, 1 turn of the pan, over medium-high heat
- 3 tablespoons vegetable oil
- 2 cups chicken broth
- Salt
- 1 pound chicken breast, chicken cutlets or chicken tenders, thinly sliced
- 3 tablespoons tamari (dark soy sauce)
- 3 tablespoons honey
- 1 tablespoon hot pepper sauce
- 1 tablespoon Dijon mustard
- 2 teaspoons sesame oil
- 1 bunch scallions, finely chopped
- 2 tablespoons sesame seeds, toasted
Enchiladas

Place the chicken in a large pot and add water to cover
- 2 pounds skinless, boneless chicken breast meat - cut into chunks
- 1 (10.75 ounce) can condensed cream of chicken soup
- 1 1/4 cups sour cream
- 1/4 teaspoon chili powder
- 1 tablespoon butter
- 1 small onion, chopped
- 1 (4 ounce) can chopped green chilies, drained
- 1 (1.25 ounce) package mild taco seasoning mix
- 1 bunch green onions, chopped, divided
- 1 cup water
- 1 teaspoon lime juice
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 5 (12 inch) flour tortillas
- 3 cups Cheddar cheese, shredded, divided
- 1 (10 ounce) can enchilada sauce
- 1 (6 ounce) can sliced black olives
Heart-Smart Refrigerator Bran Muffins

Mix cereal & wheat bran in large bowl
- 2 c. All-Bran cereal
- 2/3 c. wheat bran
- 1 &1/3 c. boiling water
- 2 &2/3 c. all-purpose flour
- 1 Tbs. baking soda
- 1/2 tsp. salt
- 2 tsp. cinnamon
- 1/4 tsp. nutmeg
- 2 c. low-fat buttermilk
- 1/2 c. egg substitute
- 1 c. sugar
- 1/2 c. packed brown sugar
- 1/2 c. oil
- 1 tsp. vanilla
Baked Lima Beans

Soak beans overnight, covering them with @ least 3-4 in
- 1 lb. dry large lima beans
- 3/4 lb. bacon, cut in 1/2 in. pieces
- 1/2 lb. (or slightly more) brown sugar
- 1/4-1/2 tsp mustard powder
- 1/2 tsp thyme
Sweet Potato Corn Cakes

Begin by cooking the sweet potatoes
- 3 lbs. sweet potatoes
- 1 cup frozen corn kernels
- 2 green onions
- 1/4 bunch cilantro (divided)
- 1/4 tsp cayenne pepper
- 1 tsp cumin
- 1 tsp salt
- 1 large egg
- 1/3 cup yellow cornmeal
- 1 cup plain breadcrumbs
- 1/2 cup vegetable oil (for frying)
- 1 cup plain yogurt
- 1 clove garlic
SLOW COOKER CRACK CHICKEN

In a slow cooker combine place chicken, cream cheese, liquid smoke and Ranch seasoning
- 2 lbs boneless chicken breasts
- 2 (8 oz) blocks cream cheese
- 2 (1 oz) packets dry Ranch seasoning
- Liquid smoke
- 8 oz bacon, cooked crisply and crumbled
Dr Pepper Pork Barbacoa

Begin by preheating your oven to 325 F
- For the sauce:
- 2 cups Tomato Sauce
- 1/2 cup brown sugar
- 1 liter (about 5 1/2 cups) Dr. Pepper (do not use diet)
- 1 tablespoon juice from pickled jalapenos
- 2 cloves garlic, finely minced
- 1/4 teaspoon onion powder
- 2 teaspoons cumin
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- few shakes of crushed red pepper
- Pork:
- 3 pounds pork loin or pork butt
- Kosher salt and cracked black pepper
- 2 tablespoons olive oil (I had some pepper-infused olive oil that I used for this to great results)
Tex-Mex Jalapenos

Halve the jalapenos lengthwise; remove the seeds
- 6 jalapeno peppers
- 1/2 cup shredded cheddar cheese
- 1/4 cup refried beans
- 2 Tbs cream cheese
- 1 tsp chili powder
- 1/4 tsp salt
- Crushed tortilla chips
- Sour cream
- Fresh cilantro
