Brats and Wilted Cabbage

In large skillet cook cabbage in 1 Tbsp
- 1/2 of a 2 lb. napa cabbage, cut into 4 wedges, core intact
- 6 cooked, smoked bratwurst links, halved diagonally
- 2 small apples, cored and cut in wedges
- 2 tablespoons Dijon-style mustard
- 1/2 cup dairy sour cream
- 1 tablespoon snipped fresh sage
Maple Chile Spiced Bacon

Preheat oven to 375 degrees
- 1/4 c. maple syrup
- 2 Tbs light brown sugar
- 2 Tbs ancho chile powder
Pico de Gallo Burger with Habanero Cheese Sauce and Guacamole

Preheat oven to 400 degrees
- 1 small yellow onion, diced
- 1 jalapeno pepper, diced
- 1 can petite diced tomatoes, rinsed and drained
- 1 tsp lime juice
- 1 ripe mango, diced
- 1 handful fresh cilantro, chopped
- 1 tbsp olive oil
- 1 dash vinegar
- 1 tbsp salt, or more to taste
- 1 ripe avocado
- 1 lb. ground round
- 1 1/2 tbsp Hellmann's mayo
- 1 tbsp Worcestershire sauce
- 1 tsp garlic powder
- 8 oz. block habanero cheese, shredded (I used Cabot)
- 1 tbsp cornstarch
- 1/2 cup whole milk
- 4 burger buns
- 1 stick butter, melted
- Hellmann's Mayo
- Green leaf lettuce
Pecan-Rum Wafers

1. Preheat oven to 375 degrees with racks in the lower and middle positions
- 2 1/4 cups pecan pieces (7 ounces), toasted
- 3 ounces (6 tablespoons) unsalted butter, softened
- 1 1/4 cups packed light-brown sugar
- 1 large egg
- 1 1/2 teaspoons dark rum
- 1/2 cup all-purpose flour
- 1/2 teaspoon coarse salt
Bean-and-Rice-Stuffed Peppers

Remove tops, membranes, and seeds from peppers
- 4 medium green, red, and/or yellow sweet peppers
- 1 15 ounce can chili beans with chili gravy
- 1 cup cooked converted rice
- 4 ounces Monterey Jack cheese, shredded (1 cup)
- 1 15 ounce can tomato sauce
Cranberry Shortbread

From lemon, grate 1 tablespoon peel and squeeze 1 tablespoon juice
- 1 lemon
- 1 cup(s) (2 sticks) butter (no substitutions), softened
- 1.25 cup(s) confectioners' sugar
- 1/8 teaspoon(s) salt
- 1 large egg
- 2.25 cup(s) all-purpose flour
- 3/4 cup(s) dried cranberries
- 1 cup(s) (1/2 cup shelled) pistachios, finely chopped (optional)
Cranberry Nut Bread

Add liquid mixture to dry ingredients&mix just until moistened
- Combine:
- 2 c. flour
- 1 c. sugar
- 1 &1/2 tsp baking powder
- 1/2 tsp baking soda
- 2 tsp cinnamon
- Add:
- 1 &1/2 c. whole cranberries
- 1 c. chopped nuts
- Melt: 2 Tbs butter
- Add to butter:
- 3/4 c. orange juice
- 1 egg, slightly beaten
- 1 Tbs almond extract
- Add liquid mixture to dry ingredients & mix just until moistened. Place in greased loaf pan. Bake @ 350 degrees 1 hour or until done in middle.
Homemade Spaghetti Sauce

In a Dutch oven, fry bacon until crisp; remove bacon and set aside
- 1/4 lb Bacon, diced
- 1 1/2 lb Ground Beef
- 1 cup Chopped Onion
- 1/2 cup Chopped Green Bell Pepper
- 3 cloves Garlic, minced
- 3 cans (15 Ounces Each) Chopped Tomatoes
- 1 1/2 Six Ounce Cans Tomato Paste
- 3/4 cup Red Wine
- 3/4 cup Water
- 1/4 cup Chopped Flat Leaf Parsley
- 2 1/2 tsp Dried Basil
- 2 1/2 tsp Dried Oregano
- 2 tsp Salt
- 1 tsp Dried Thyme
- 1 tsp Sugar
- 1 Small Bay Leaf, crumbled
- Freshly Ground Black Pepper, to taste
Grilled Cheese with Tomatoes and Bacon

Season tomatoes with sea salt and set aside
- 2 large heirloom tomatoes, sliced 1/4" thick
- Sea salt (such as Maldon)
- 12 oz. bacon
- 8 slices Pullman bread, cut 1/2" thick
- 1/2 c. mayonnaise
- 1/2 lb. sliced Gruyère cheese
- 1/2 lb. sliced provolone
Queso Blanco Dip

In a slow cooker combine the cream cheese, american cheese, butter, green chiles and jalepenos
- 8 oz block regular cream cheese, cut into 1/2 inch cubes
- 1 lb white american cheese, cut into 1/2 inch cubes (found in deli)
- 1 Tablespoon salted butter
- 1 (4oz can) Old El Paso Green Chiles
- 2 Tablespoons cilantro, chopped fine (optional)
- 1 Tablespoon Old El Paso jalapenos, minced fine (optional)
- 3-4 Tablespoons milk
- 2-3 Tablespoons water
