Asian Slaw & Spicy Shrimp

Add the peapods to the slaw mix
- For the Slaw:
- 1 bag precut slaw with carrots
- 1/2 cup prepared peapods
- 3 tablespoons soy sauce
- 3 tablespoons sugar
- 1 tablespoon rice wine vinegar
- 2 tablespoons white vinegar
- 1 tablespoon (less if you don't like heat) sriracha sauce
- 1 teaspoon ground ginger
- 1/2 teaspoon sesame oil
- 1/2 teaspoon sesame seeds
- For the shrimp:
- 5 or 6 large shrimp, thawed
- 1/2 teaspoon sesame oil
- 3 tablespoons olive oil (mine was hot pepper infused), divided
- 1 tablespoon soy sauce
- 1 teaspoon sriracha
- 2 tablespoons water
Cranberry Shortbread Cookies

1. cream together the butter and sugar until light and fluffy, about 3 minutes
- 3/4 pound (3 sticks) unsalted butter, room temperature
- 1 cup sugar
- 1 teaspoon vanilla extract
- 3 1/2 cups all purpose flour
- 1/4 teaspoon kosher salt
- 3/4 cup chopped dried cranberries
- 1 cup roughly chopped pistachios
- 1 cup white chocolate chips
Sweet Cinnamon & Cardamon Biscuits

Combine 1st 4 ingredients in bowl & mix well
- 2 c. all purpose flour
- 1 Tbs. baking powder
- 1 tsp. salt
- 1/4 tsp. baking soda
- 1/4 c. vegetable oil
- 3/4 c. buttermilk
- 1/2 c. butter, softened
- 3/4 c. sugar
- 1 tsp. cinnamon
- 1/2 tsp. cardamon
Broccoli Chicken Salad

Mix first 6 ingredients and 1/3 cup water in a bowl
- 3 tablespoons vegetable oil
- 1/2 cup peanut butter (any kind)
- 3 tablespoons reduced-sodium tamari or soy sauce
- 2 tablespoons lime juice
- 2 teaspoons minced fresh ginger
- 1 garlic clove, minced
- 1 pound broccoli florets
- 1 cup frozen peas, thawed
- 2 cups shredded cooked chicken
- 1/2 cup roughly chopped cilantro leaves
Hoisin Chicken

Preheat grill to medium high & brush grates with vegetable oil
- 2 Tbs vegetable, plus more for brushing
- 2 Tbs soy sauce
- 2 tsp grated ginger
- 1/2 tsp Chinese five-spice powder
- 1.5 lbs skinless, boneless chicken thighs, quartered
- 1/4 c. hoisin sauce
- Toasted sesame seeds
- Sliced scallions
Refried Black Beans

In a medium, heavy pot, combine the beans, bay leaf, and enough water to cover by 1 to 2 inches
- 2 cans black beans, drained OR
- 1 cup dried black beans, soaked overnight in a large bowl with water to cover by 2-inches, and drained
- 1 bay leaf
- 1/2 cup bacon drippings or lard
- 1 cup chopped yellow onions
- 1 tablespoon minced garlic
- 1 tablespoon minced, seeded jalapeno
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon salt
- Pinch cayenne
- 1/2 teaspoon chopped oregano
- 1/2 cup grated queso blanco
- 1/4 cup minced fresh cilantro, garnish
Cherry Cream Pie with a Granola Crust

Pulse the granola in a food processor until it has a less chunky, more crumbly consistency
- For the crust:
- 2 c. Sunbelt Bakery Lowfat granola cereal **I had to pick the raisins out of this particular box
- 5 T. butter, melted
- For the cherry pie filling:
- 5 to 6 cups fresh pitted cherries, about 2 1/2 to 3 pounds
- 1/2 cup water
- 2 tablespoons fresh lemon juice
- 2/3 cup granulated sugar
- 4 tablespoons cornstarch
- 1/4 teaspoon almond extract
- For the pie:
- 8 oz cream cheese, softened
- 1 c. confectioners sugar
- 1 tsp. vanilla extract
- 8 oz. frozen whipped topping thawed
- granola pie crust
- 16 oz cherry pie filling

Preheat oven to 175°C | 350°F
- 1 1 8oz/240g cup 8oz/240g butter, melted and cooled
- 2 2 2 tablespoons (30ml) vegetable oil
- 1 1/4 1 1/4 1/4 cups (9oz/260g) white sugar
- 1 1 1 cup (7oz/200g) packed light brown sugar
- 4 4 4 (2oz/57g each) large eggs, at room temperature
- 1 1 1 tablespoon (15ml) pure vanilla extract
- 3/4 3/4 3/4 teaspoon salt
- 1 1 1 cup (3.5oz/130g) all purpose flour
- 1 1 1 cup (3.5oz/100g) good quality, unsweetened cocoa powder
- 7 7 7 oz (200g) roughly chopped chocolate or large chocolate chips
- 1 1 1 cup chopped nuts
Spicy Pulled Pork

Preheat the oven to 300 degrees F
- 2 onions, peeled and quartered
- 1 whole pork butt (pork shoulder roast)
- Salt and freshly ground black pepper
- One 11-ounce can chipotle peppers in adobo sauce
- 2 cans pop (I use Dr Pepper)
- 4 packed tablespoons brown sugar
