Combine mayonnaise and tomatoes in a small bowl
- 1 cup mayonnaise
- 1/2 cup dried tomatoes in oil, drained and chopped
- 8 (10-inch) flour tortillas
- 1 large head iceberg lettuce, chopped
- 1 medium onion, thinly sliced (optional)
- 16 bacon slices, cooked and crumbled
- 1 teaspoon salt
- 1 teaspoon pepper
Potato Salad With Olives And Jalapenos

Combine potatoes, and 1/2 teaspoon salt in a stockpot
- 3 medium baking potatoes, peeled if desired (about 1 pound total)
- 2 quarts water
- 3/4 teaspoon salt, divided
- 3/4 cup light mayonnaise
- 1 1/2 teaspoons Dijon mustard
- 1/8 to 1/4 teaspoon cayenne pepper
- 6 jalapeno chile-stuffed olives, thinly sliced
- 1/2 cup finely chopped celery
- 1/4 cup finely chopped onion
- 2 hard-cooked eggs, chopped
- 1/4 teaspoon black pepper

- 3/4 cup granulated sugar divided use

- 1/4 cup butter melted, 1/2 stick

Preheat oven to 375°. In a mixing bowl, combine the molasses and the boiling water and mix
- 1 Cup dark molasses
- 1 Cup boiling water
- 1 Cup sugar
- 1 Cup vegetable oil
- 2 eggs
- 3 Cups flour
- 1 tsp. baking soda
- 1 tsp. POWDERED GINGER
- 1 tsp. PENZEYS CINNAMON
- 1 tsp. BAKING SPICE
- 1/2 tsp. GROUND ALLSPICE
- 1/2 tsp. salt

BLT Burgers with Bacon Mayonnaise

Make the candied bacon: Preheat the oven to 350 degrees F
- 3 tablespoons packed light brown sugar
- Pinch of cayenne pepper
- Pinch of ground cinnamon
- 4 slices thick-cut bacon
- 3 slices thick-cut bacon
- 1/3 cup mayonnaise
- 2 tablespoons sour cream
- 1 tablespoon chopped fresh chives
- Kosher salt and freshly ground black pepper
- 1 1/2 pounds ground beef chuck
- Kosher salt and freshly ground black pepper
- 2 tablespoons canola oil
- 4 slices cheddar cheese
- 8 slices Texas toast, toasted
- Romaine lettuce and sliced tomato, for topping

- May add chopped nuts
- A few dried cranberries
- Drizzle of maple syrup

Strawberry Salad with Cinnamon Viaigrette

- Dressing:
- 1/3 c. olive oil
- 1/3 c. raspberry vinegar
- 3 Tbs sugar
- 1/2 tsp Tobasco
- 1/2 tsp salt
- 1/8 tsp pepper
- 1/2 tsp cinnamon
- Salad:
- 2 heads Romaine, torn into bite-size pieces
- 11 oz. can mandarin oranges, drained
- 1 pt. strawberries, stemmed & quartered
- 1/2 c. chopped pecans, toasted
- Medium avocado, diced
Pineapple Quesadillas with Spicy Strawberry Salsa

- 2 cups fresh pineapple chunks, cut into squares
