Pasta with Cavatelli, Sausage and Chickpeas

You can use Cavatelli or Orecchiette Pasta
- 2 Tbsp. olive oil
- 2 small shallots, chopped
- 3/4 lb. Sweet Italian Sausage
- 2 Tbsp. tomato paste
- 1/2 tsp. crushed red pepper flakes
- 2 cups low-sodium chicken broth
- 1 15-oz. can chickpeas, rinsed
- 1 lb. Cavatelli
- Kosher salt
- 2 Tbsp. chopped fresh flat-leaf parsley
- Finely grated Parmesan and lemon zest (for serving)

Aunt Linda's Pasta Salad

Cook and drain broccoli and carrots
- 1 lb. tri-color pasta
- 1 pkg. Hidden Valley Ranch Dip Mix
- 16 oz. sour cream
- 16 oz. Italian Dressing
- 1 box frozen broccoli or fresh broccoli
- 1 box frozen carrots or fresh carrots
- 1 can small black pitted olives
- 1 pint small cherry tomatoes
- 1 tsp. garlic powder
- 1 tsp. parsley
Spaghetti with Shrimp and Crab

- 1/2 lb. shrimp
- 1 lb crab meat
- 4 Tbsp. olive oil

Ricotta Dumplings in Broth

- 1 lb. ricotta
- 3 cloves garlic, minced
- Parsley, minced
- 1 cup Italian style bread crumbs
- 7 oz. Parmigiano Reggiano Cheese
- 2 eggs
- 12 cups of Chicken Broth (store bought or homemade)
Lentil Soup

- 1 bag lentils
- 4 cups chicken broth
- 3 cups water
- 2 tablespoons olive oil
- 3-4 cloves garlic, chopped fine
- 4 carrots
- Parsley
- Italian Seasoning
- Oregano
- Salt
- Pepper
- White Wine
Mussels in Herb Butter

Steam well-scrubbed and bearded mussels in the usual manner until they open
- 2 doz. mussels
- 1/2 cup softened butter
- 1 tbsp. chopped parsley
- 1 tbsp. lemon juice
- 1 shallot
- 3 large cloves garlic, pureed
- 1 slice raw bacon, minced
- salt and pepper
Chicken Saltinboca

- 3 large breasts, boned, skinned and halved
- 6 thin slices prosciutto ham
- 6 slices mozzarella
- 1 med. chopped tomato
- 1/2 tsp. dried sage
- 1/3 cup fine dry bread crumbs
- 2 Tbsp. parmesan cheese
- 2 Tbsp. fresh parsley
- 4 Tbsp. melted butter
