Eggplant Parmigina

This can be prepared a day ahead and cooked just before serving
- 2 eggplants, 1 1/4 to 1 1/2 lbs. each
- 2 tablespoons salt-coarse
- 1/2 cup flour
- 3 eggs
- 2 tablespoons milk
- 2 1/2 cups Italian Bread Crumbs
- 1 teaspoons salt
- 1/2 teaspoon pepper
- 1/2 to 3/4 cup olive oil
- 3 1/2 cups homemade marinara sauce
- 2 cups Besciamella Sauce
- 2 cups shredded mozzarella cheese (about 8 oz)
- 1/2 cup grated Parmesan cheese
French Onion Soup

Heat butter in large pan over medium heat
- 1/4 cup butter
- 4 large yellow onions, thinly sliced
- 1/2 teaspoon sugar
- 6 cups canned beef broth
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon paprika
- Salt and Pepper to taste
- Sliced French or Italian Bread- thin
- 1/4 cup freshly grated Gruyere cheese
- 1/4 freshly grated Parmesan cheese
Hot Crab Dip

Place crabmeat in strainer, rinse and remove all membrane and any bits of shell
- 1-8oz. Philadelphia Cream Cheese, softened
- 1-16 1/2oz. can crabmeat, rinsed and drained
- 2 Tablespoons dried minced onion
- Dash Pepper
- Almonds (optional)

Turkey Gravy

Makes 3-1/2 cups
- 2/3 cup pan drippings from turkey
- 2/3 cup Wondra flour
- 1-1/3 cups chicken broth
- 1-1/3 cups dry white wine
- 1/2 teaspoon dried rubbed sage
- 1/2 teaspoon leaf thyme
- 1/4 teaspoon onion salt
- 1/4 teaspoon pepper
- Kitchen Bouquet, if desired.
Crabby Mushrooms

Preheat oven to 400 degrees
- 1 6-to 6 1/2 ounce can crabmeat or 1/2 lb. fresh rinsed and drained
- 2 teaspoons fresh lemon juice
- 1/3 cup finely chopped black olives
- 1/4 cup mayonnaise
- 2 tablespoons chopped fresh parsley
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 24 medium mushrooms, stems removed
- Freshly grated Parmesan cheese
Old Fashion Sour Cream Cookies

Sift flour, baking powder, baking soda and salt, set aside
- Topping:
- 3 cups sifted flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup margarine
- 1 1/2 cups sugar
- 2 eggs
- 1 cup dairy sour cream
- 1 teaspoon vanilla
- 1/2 cup sugar
- 1 teaspoon cinnamon
Macaroni Salad

Cook macaroni according to package directions, drain and rinse with cold water until cool
- 1 (16 ounce) box elbow macaroni (Creamettes)
- 1 lb baby shrimp
- 4 stalks celery
- 1/2 onion chopped fine
- 1 green pepper chopped fine (optional)

Strufoli - Italian Honey Balls

- 1/4 cup shortening melted
