Braciola

Lay steak flat. Sprinkle with olive oil, salt and pepper
- 1 1/2 lbs. round steak cut 1/2" thick
- salt and pepper
- 1 clove garlic (chopped fine)
- 1 hard cooked egg (chopped fine) optional
- 1 tbsp. fresh parsley (chopped)
- 4 tbsp. onion (chopped)
- 1/2 cup Italian bread crumbs
- 1 tbsp. Locatelli cheese
Seafood Sauce

Heat eh oil and saute' onions and garlic over medium-high heat until golden brown
- 4 tablespoons olive oil
- 2 onions, minced
- 4 cloves garlic, minced
- 1 cup dry white wine
- 4 28-oz. cans ready-cut, peeled tomatoes
- 4 teaspoons fresh basil
- 1 tablespoon oregano
- 4 teaspoons fresh parsley, chopped
- 3 pounds small fresh clams, well scrubbed, or 4 can chopped clams
- 2 pounds scallops, quartered
- 2 pounds shrimp, peeled and deveined

Mushroom Salad

Rinse ingredients under cold water real fast
- 1 - 8 oz. jar Pickeled Eggplant
- 1 - 16 oz. jar Mushrooms (stems and pieces)
- 1 - 8 oz. jar Green Olives with pimento
- 1 - 8 oz. Can Black Pitted Olives
- 2 stalks of Celery- chopped
- 2 Carrots- chopped
- 1 - 8 oz. can Artichoke Hearts
- 1 - small jar mushroom salad
- 1 cup Olive Oil
- Black Pepper to taste
- Oregano to taste
Butter Cookies

Pre-heat oven 350 degrees Cream butter and sugar in mixing bowl until light and fluffy
- 1 lb. butter
- 1 1/3 cups sugar
- 2 eggs
- 5 cups sifted flour
- 1 teaspoon baking powder
- 2 teaspoons vanilla
- 3 teaspoons milk
Peanut Butter Cookies

- 2 cups sifted flour
- 1 1/2 tsp. baking powder
- 1/2 tsp. salt
- 2 tablespoons shortening
- 1/2 cup peanut butter
- 1 cup sugar
- 1 egg
- 1 tsp. vanilla
- 1/2 cup milk

- 4 eggs
- 1 cup sifted flour
- 2/3 cups milk
- 1 teaspoon salt
- 1/2 cup melted butter
- Dessert:
- 2 eggs
- 2/3 cups milk
- 1 tablespoon melted butter
- 1 teaspoon sugar
- 1/2 cup sifted flour
- 1/4 teaspoon salt
Pineapple Stuffing Casserole

- 3 eggs
- 1 cup sugar

- 1 cup finely chopped hazelnuts or pecans

- Diced celery
- Diced onion
- Italian Seasoned Bread Crumbs
- Paprika

Pasta Fagiola Soup

Serve with Italian Bread and grated cheese
- • 2 tablespoons (2 turns around the pan) extra-virgin olive oil
- • 1/8 pound (about 3 slices) pancetta, chopped
- • 2 (4 to 6-inch) sprigs rosemary, left intact
- • 1 (4 to 6-inch) sprig thyme with several sprigs on it, left intact
- • 1 large fresh bay leaf or 2 dried bay leaves
- • 1 medium onion, finely chopped
- • 1 small carrot, finely chopped
- • 1 rib celery, finely chopped
- • 4 large cloves garlic, chopped
- • Coarse salt and pepper
- • 2 (15 ounce) cans cannellini beans
- • 1 cup canned tomato sauce or canned crushed tomatoes
- • 2 cups water
- • 1 quart chicken stock
- • 1 1/2 cups ditalini
- • Grated Parmigiano or Romano, for the table
