- 1 lb mushrooms, sliced (I used 8 OZ)
- 1 tap fresh thyme leaves or 1 TBS chopped fresh parsley
- 1/4 cup dry white wine

ITALIAN SAUSAGE WITH GRAPES AND ONIONS

1. Heat oil in 12-inch skillet over medium heat until shimmering
- 1 tablespoon vegetable oil
- 1 1/2 pounds sweet Italian sausage
- 1 pound seedless red grapes, halved lengthwise (3 cups)
- 1 onion, halved and sliced thin
- 1/4 cup water
- 1/4 teaspoon pepper
- 1/8 teaspoon salt
- 1/4 cup dry white wine
- 1 tablespoon chopped fresh oregano
- 2 teaspoons balsamic vinegar
- 2 tablespoonsd chopped fresh mint
CRABMEAT-STUFFED MUSHROOMS

1. In medium saucepan, melt 4 TBS butter
- 3/4 cup (1 1/2 sticks margarine or butter, divided)
- 3/4 cup chopped yellow onions
- 3/4 cup chopped fresh mushrooms
- 1/4 tsp salt
- 1/8 tsp cayenne
- 1 1/2 tsp granulated garlic
- 1/4 pound clawmeat
- 1 1/2 TBS chopped green onions
- 1 1/2 tsp parsley flakes
- 1 TBS fresh Italian bread crumbs
- 24 fresh jumbo mushroom caps
- grated Parmesan cheese
MAKE-AHEAD TURKEY GRAVY

For more flavor, after roasting the turkey skim the drippings from from the pan and add to the gravy
- Reserved giblets (except liver)
- 6 turkey drumsticks, thighs or wings
- 2 carrots, chopped coarse
- 2 celery ribs, chopped coarse
- 2 onions, chopped coarse
- 1 head garlic, halved
- 10 cups chicken broth
- 2 cups dry white wine
- 12 sprigs fresh thyme
- 1/2 cup flour
- salt and pepper
FRIED CHICKEN SALAD

1. Combine the first 6 ingredients in a shallow dish and set aside
- 1/4 c all-purpose flour
- 1/4 cup dry breadcrumbs
- 1 tsp garlic powder
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/2 tsp black pepper
- 3/4 lb skinless, boneless chicken breasts, cut into thin strips
- 1/2 cup low-fat buttermilk
- 1 TBS olive oil
- Cooking spray
- 4 cups thickly sliced romaine, include ribs
- 1/2 cup fat-free honey-Dijon mustard salad dressing
- 1/2 cup (2 oz) blue cheese
LINGUINE W/ OLIVE OIL, PARMESAN AND ONION

1. Heat 1 TBS EVOO in small skillet over medium-low heat
- 1 lb fettucine
- 4-5 TBS EVOO
- 1 cup chopped onions
- 1/4 cup chopped fresh parsley
- 2 TBS chopped fresh basil
- 2 TBS choppped fresh thyme
- 1 TBS chopped fresh oregano
- salt and freshly ground pepper
- 1/2 cup freshly grated Parmesan, plus add'l for serving
MARINARA SAUCE

- 1 28 oz can tomatoes, cut up
- 1/4 cup dry red wine (optional)

- 1/8 tsp ground black pepper
- 1/4 cup snipped fresh basil
- 2 tsp sugar
- 8 oz dried pasta, cooked according to package directions

- 1 cup raisins
- 1 teaspoon water
- 2 1/4 cups All-Bran Original cereal (5 ounces)
- 1 1/4 cups unbleached all-purpose flour (6 1/4 ounces)
- 1/2 cup whole wheat flour (2 1/2 ounces),
- 2 teaspoons baking soda
- 1/2 teaspoon table salt
- 1 large egg
- 1 large egg yolk
- 2/3 cup packed light brown sugar (4 2/3 ounces)
- 3 tablespoons mild molasses (or light)
- 1 teaspoon vanilla extract
- 6 tablespoons unsalted butter (3/4 stick), melted and cooled
- 1 3/4 cups plain whole-milk yogurt
BACON-WRAPPED PORK TENDERLOIN MEDALLIONS

- 12-14 slices bacon (1 slice for each pork medallion)
