Chile Jam Chicken With Daphne Oz Caramelized Sweet Potatoes and Peaches Serves 2

Pat the chicken dry and season both sides liberally with salt and pepper
- 4 skinless, bone-in chicken thighs
- Sea salt
- Freshly cracked black pepper
- 2 tbsp olive oil
- 4 tbsp chile jam (some of my favorites: Hell Fire Pepper Jelly from Jenkins Jellies or INNA Jam’s Plenty Spicy Jalapeno for heat seekers)
- Juice of 1/2 lemon
- Serve with Caramelized Sweet Potatoes and Peaches
Grilled Salmon

"An easy delicious way to grill salmon
- 1/4 cup brown sugar
- 1/4 cup olive oil
- 1/4 cup soy sauce
- 2 teaspoons lemon pepper
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- 1 teaspoon dried parsley
- 1/2 teaspoon garlic powder
- 4 (6 ounce) salmon fillets
Antipasto Sausage Skewers

Heat a nonstick skillet over medium heat; mist with cooking spray
- Cooking spray
- 12 ounces fully cooked Italian-style poultry sausage, cut into 1-inch pieces
- 1/2 cup lightly packed fresh basil
- 1 12-ounce jar roasted red peppers, drained, rinsed and cut into 1-inch pieces
- 2/3 cup sun-dried tomatoes, cut into 1-inch pieces if large
- 1 14-ounce can artichoke hearts, drained and quartered
Mini Brie Bites

Preheat oven to 350°F. Place mini shells on a baking sheet
- 1 package 15 mini fillo (phyllo) shells
- 4-6 oz. brie cheese (casing removed; to make removing the casing easier, put brie in freezer for a few minutes, it will also make it easier to cut the brie into cubes)
- jar of favorite preserves (apricot is shown, but any would do, you could also use apple butter or cranberry sauce)
Mushroom Pasta

Submerge the mushrooms in cold water, swish around to wash thoroughly, and drain
- 1 1/2 pounds fresh mushrooms
- 1/2 lemon
- 3 cloves garlic, minced
- 3 tablespoons extra-virgin olive oil
- 1 1/2 teaspoons coarse salt
- 1/4 teaspoon freshly ground black pepper
- 2 tablespoons chopped fresh flat-leaf parsley
- Splash of White Wine
- 1/4 . c. heavy cream or half and half
- 3-4 T. grated parmesan cheese
- 1 bag En Papillote Noodles
Flourless Lemon Poppyseed Muffins (Paleo)

Preheat oven to 325 degrees In a large bowl mix together the eggs, vanilla, and lemon juice
- 1/2 cup + 1 tbs of coconut flour
- 5 eggs
- 1 tbs of vanilla
- 1/4 cup of melted coconut oil
- 2 medium sized lemons juiced
- 1/3 cup of honey
- 1/2 tsp of baking soda
- Zest from 2 lemons
- 2 tbs of poppyseeds (you could also use chia seeds if you can not find poppyseeds)

- 1 1/2 vegetable broth
- 1/2 teaspoon garlic powder
- 1/4 teaspoon chili powder
- 1/4 teaspoon ground cumin
- 1 (15 ounce) can pinto beans, drained and rinsed
- 1/2 (16 ounce) can diced tomatoes
- 1 cup frozen corn
- cut up cooked chicken breasts (optional)
- 4 (6 inch) corn tortillas, torn into strips
- 1 tablespoon chopped fresh cilantro
- salt and pepper to taste
