Penne Pasta with Zuchinni, Tomato and Feta

Bring a large pot of water to a boil over high heat
- Kosher salt to taste 4 large tomatoes, seeded and diced
- 1 pound whole grain penne, or other short chunky pasta 3/4 cup crumbled feta cheese
- 2 tablespoons olive oil Zest of 1 lemon
- 1 large red onion, diced Freshly ground black pepper to taste
- 2 medium zucchini, sliced
Garlic Cheddar Chicken

Preheat oven to 350 degrees F (175 degrees C)
- 2 tablespoons butter
- 1 clove garlic, minced
- 3 tablespoons dry bread crumbs
- 2 tablespoons freshly grated Parmesan cheese
- 1/4 cup and 2 tablespoons shredded Cheddar cheese
- 1/8 teaspoon dried parsley
- 1/8 teaspoon dried oregano
- 1/8 teaspoon ground black pepper
- 1/8 teaspoon salt
- 2 skinless, boneless chicken breast halves - pounded thin
Banana Bread Bites

Preheat the oven to 350 degrees F
- 1 cup sugar
- 1/2 cup (1 stick) butter
- 2 eggs
- 1 cup ripe mashed bananas (about 3)
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup semisweet chocolate chips
- 1/2 cup chopped walnuts
