- 4 4 4 oz fat free cream cheese, slightly softened
- 8 8 8 oz Guittard's green mint chips *
- 8 8 8 oz white chocolate chips or white chocolate bark
- Once the truffles have been in the fridge for a while, melt the green mint chips in a double broiler or a microwave safe bowl.

This chicken piccata recipe is quick, easy and full of flavor
- 4 Chicken breasts – 4 oz pieces
- 2 oz Dry White Wine
- 4 oz Chicken broth
- 2 Tablespoons Capers
- 2 Tablespoons Italian Parsley, chopped
- 2 Lemons, juiced
- 1 oz Sweet Butter
- 1-2 Tablespoons Olive Oil
- Flour
- Salt & Pepper

In a large saucepan over low heat, melt butter; add garlic and cook for 30 seconds

- 2 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, chopped
- 1 cup chicken broth, divided

- 1 pound skinless, boneless chicken breast halves

- 2 cups frozen unsweetened strawberries, thawed
- 1 cup sugar
- 1 teaspoon lemon juice

Grilled Zucchini Greek Salad

Preheat grill to high. (You can only hold your hand there for a second at that heat
- 1 zucchini about 10 inches long
- 2 medium summer tomatoes (or 5-6 cherry tomatoes), chopped into bite-sized pieces
- 1/4 cup Kalamata olives, about 8 olives (Use pitted olives, I cut the olives in half but you don't have to.)
- 1/4 cup crumbled feta cheese (or less)
- olive oil, to brush on zucchini
- 1 tsp. Greek seasoning (I use Greektown "Billy Goat" Seasoning from The Spice House.)
- 1 T + 2 T vinaigrette dressing (Use a dressing with less than 3 grams sugar per serving for South Beach Diet.)
