Cowboy Caviar

Combine olive oil, vinegar, garlic, cumin, salt and pepper
- 1 15oz can blacks-eyed peas, drained
- 1 11oz can white shoe peg corn, drained
- 2/3 C green onion, chopped
- 2/3 C cilantro, chopped
- 1/2 C tomatoes, chopped
- 2 avocados, chopped
- 1/3 C olive oil
- 1/4 C red wine vinegar
- 2 cloves garlic, pressed
- 1 tsp cumin
- salt and pepper

- 1 large butternut squash
- 2-3 med-large leeks
- 1 large yellow or spanish onion
- 2-3 T olive oil
- 1 32oz carton veggie broth
- 1 T curry
- 5 cubes candied ginger (or ~1/2 T grated ginger root) (newer addition to the recipe-is also very good without the ginger too but does add a little zing- or could try shake or two of red pepper flakes?)
- salt & pepper to taste

MELT butter in large skillet
- 1 pkg. (3 oz.) instant oriental flavored Ramen noodles
- 1 tbsp butter
- 1/2 head cabbage, chopped
- 2 chicken breasts, cooked and shredded
- 4 green onions, chopped
- 1/2 c. slivered almonds, toasted
- 2 tbsp. toasted sesame seeds
- 1/3 c. vegetable or peanut oil
- 3 tbsp. vinegar
- 2 tbsp. sugar
- Salt, freshly ground pepper to taste

- 1 lg onion, finely chopped
- 4 lg garlic cloves minced
- 1 1/2 tsp dried basil
- 1 1/2 lbs mushrooms, sliced
- 1 C dry red wine
- 1 C chicken broth
- 1/4 C tomatoe paste
- 1/2 C parsley minced
- 1 tsp softened unsalted butter

- 3 pounds bone-in country-style pork ribs, trimmed of excess fat

Lemon and Capers Shrimp Pasta

- 2 lbs of Large Shrimp deveined
- 6 Tbsp Capers
- 4 Tbsp Freshly squeezed lemon juice (no seeds)

- 2 Garlic Cloves crushed into sauce
- Pinch of Italian parsley, chopped
- Pinch of all purpose flour
- 1/2 cup dry white wine
- 1 lb of fettucini (fresh Lemon flavored pasta optional)
