Crab Appetizer

- 2 C Mayonnaise
- 1/2 lb canned artichoke hearts, chopped
- 1/2 lb crab meat
- 4 oz shredded parmesan
- 4 oz thinly sliced onions
- 3 tsp minced parsley
Shrimp and Pasta Puttanesca

spicy shrimp and linguini
- pound dry linguine
- 1 1/2 tablespoons olive oil
- 1 pound peeled and deveined large shrimp (fresh or frozen)
- 1/4 teaspoon black pepper
- 1 1/2 tablespoons capers, roughly chopped
- 3/4 cup kalamata olives, pitted and roughly chopped
- 2 anchovy fillets, finely chopped (optional)
- 1 26- to 32-ounce jar marinara sauce
Corn Salad w/ Feta

1. Heat oven to 400° F
- 1 cup walnuts
- 4 cups fresh corn kernels (from 4 ears), raw or cooked
- 2 jalapenos, seeded and thinly sliced
- 2 tablespoons fresh lime juice
- 2 tablespoons extra-virgin olive oil
- kosher salt and black pepper
- 1/2 cup crumbled Feta (2 ounces)
Crunchy Herbed Chicken

1. Heat oven to 400° F
- 4 * 4 slices white bread, toasted
- 1/2 * 1/2 cup fresh flat-leaf parsley
- 1 * 1 clove garlic, chopped
- * kosher salt and black pepper
- 1 * 1 tablespoon olive oil
- 1/4 * 1/4 cup Dijon mustard
- 4 * 4 6-ounce boneless, skinless chicken breasts
Spanish Sangria

A good Rioja and Brandy make this yummy
- 2 bottles of red wine (recommended: Rioja)
- 2 cups brandy
- 1 cup fresh orange juice
- 1 orange, sliced
- 1 lemon, sliced
- 1 lime, sliced
- 1 apple, cored, and cut into thin wedges
- 1 pear, cored, and cut into thin wedges
- 1 (750-ml) bottle club soda, chilled
- Brown sugar or granulated sugar (for glass rims)

- 8 0z Cream cheese
- 1 stick butter
- 2 sticks margarine
- 3 C cake flour (sifted)
- 3 C sugar
- 1/4 tsp salt
- 1/4 tsp baking powder
- 6 eggs
- 2 tsp vanilla
- or
- 2 tsp lemon extract plus zest
Fruit Salad Dressing

- 2 Tbsp Honey
- 1 Tbsp Lime Juice
Penne with Butternut Squash

- Kosher salt
- 12 ounces whole-wheat or multigrain penne
- 2 tablespoons extra-virgin olive oil
- 2 cups diced peeled butternut squash (about 8 ounces)
- Freshly ground pepper
- 12 ounces cremini mushrooms, trimmed and sliced
- 4 cloves garlic, minced
- 1 medium shallot or 1/2 small red onion, minced
- 1/4 to 1/2 teaspoon red pepper flakes
- 1 cup grated parmesan cheese (about 2 ounces)
- 3 tablespoons fresh oregano
