Chicken lettuce wraps

In sm. bowl, combine 1st 3 ingredients and stir til sugar dissolves
- ¼ cup soy sauce
- 4 t. sugar
- 4 t. fish sauce
- 1 T. vegetable oil
- 2 T. minced peeled fresh ginger
- 1 large shallot, finely chopped
- 2 garlic cloves, minced
- 1 serrano chile, seeded and finely chopped
- 1 lb. ground turkey
- 1 T. (heaping) creamy peanut butter
Israeli Couscous w/ Arugula Salad

- Ingredients
- 1 1/2 cups Israeli (pearl) couscous
- 2 tablespoons fresh lemon juice
- 1/2 teaspoon Dijon mustard
- 1/4 cup olive oil
- 1/4 teaspoon dried red pepper flakes
- Kosher salt
- Freshly cracked black pepper
- 1 vine-ripened tomato, diced
- 1/2 cup dried currants
- 1 hothouse cucumber, seeded and diced
- 1 red bell pepper, seeded and diced
- 1/2 red onion, diced
- 2 cups Israeli (curly baby) arugula
Orzo Salad with Zucchini and Feta

1. Cook the orzo according to the package directions
- • 8 ounces orzo (1⁄2 box)
- • 3 tablespoons olive oil
- • 3 tablespoons white wine vinegar
- • 1/2 teaspoon crushed red pepper
- • kosher salt and black pepper
- • 1 1/4 pounds small zucchini (3 to 4), cut into thin half-moons
- • 8 ounces Feta, crumbled (2 cups)
- • 1/4 cup chopped fresh dill

- 12 slices white bread (french or italian), crusts removed
- 1 pkg (16oz) cream cheese with some buttermilk
- 2 cups blueberries
- 10-12 eggs
- 2 cups milk
- 1/2 cup maple syrup
- cinnamon over top
- 3/4 cups sugar
- 2 tbsp cornstarch
- 1 cup water
- 4 cups blueberries
- 2 tbsp butter
Black Bean Salad with Corn, Red Peppers, Avocado and Lime-Cilantro Vinaigrette

Make ahead... better over time
- Ingredients
- 2 15-ounce cans black beans, rinsed and drained
- 3 ears fresh cooked corn, kernels cut off the cob
- 2 red bell peppers, diced
- 2 cloves garlic, minced
- 2 tablespoons minced shallots, from one medium shallot
- 2 teaspoons salt
- 1/4 teaspoon cayenne pepper
- 2 tablespoons sugar
- 9 tablespoons extra virgin olive oil, best quality such as Colavita
- 1 teaspoon lime zest (be sure to zest limes before juicing them)
- 6 tablespoons fresh lime juice
- 1/2 cup chopped fresh cilantro, plus more for garnish
- 2 Hass avocados, chopped
Roasted Broccoli

Put the broccoli on a cookie sheet
- 1 head broccoli
- 1-2 tbs olive oil
- Zest and juice of about 1 lemon
- parmesan cheese
- 1-2 garlic cloves, peeled and sliced
Spinach stuffed flank steak

In a small bowl soak dried tomatoes in enough hot water to cover for 10 minutes
- 1/4 cup dried tomatoes (not oil packed)
- 1 1-pound beef flank steak or top round steak, trimmed of separable fat
- 1/8 teaspoon salt
- 1/8 teaspoon pepper
- 1 10-ounce package frozen chopped spinach, thawed and well drained
- 2 tablespoons grated Parmesan cheese
- 2 tablespoons snipped fresh basil

Directions 1. Cream together butter, peanut butter and sugars

- 3 T olive oil
- 4 med cloves garlic, chopped
- 2 C onion chopped
- 1 med eggplant (7-8inch long, 4-5in diameter) cubed
- 1 1/2 t salt
- 1 1/2 t basil
- 1/2 t thyme
- 1 1/2 t cumin
- 2 t chili powder
- cayenne to taste
- 1 6-7inch zucchini, cubed
- 2 med bell peppers, in strips
- fresh black pepper
- 1 14 1/2oz can tomatoes
- freshly minced parsley
- minced olives
Captain Rodney's Cheese Bake Dip

Becky's recipe
- 1/2 cup mayonnaise
- 1 (8 ounce) packages cream cheese
- 1 cup grated cheddar cheese
- 2 chopped green onions
- 8 slices chopped cooked bacon ( I have often used Kraft real picnic style bacon bits, in a pinch)
- 1/2 cup captain rodney's boucan glaze ( I think any sweet pepper jellies will work, but I prefer theirs)
- 12 -20 Ritz crackers or 12 -20 townhouse crackers
