Spanish Apple and Manchego Cheese Crostini

Use a griddle pan for the desired grilled look
- 1/4 ciabatta (about 150 g)
- 1 tbsp garlic oil
- 1 apple, cored and cut into 16 wedges
- 50 g mancheo cheese, cut into 8 cubes
- 1 tbsp snipped fresh chives
Gambas Al Ajillo (Garlic Shrimp)

Use pimenton and a half a head of elephant garlic or full head of garlic
- 1/3 cup olive oil
- 50 grams elephant garlic, roughly chopped (1.75 ounces)
- 1 teaspoon pimentón
- 450 grams shrimp, peeled and deveined (1 pound)
- salt and pepper to taste
- 1 tablespoon minced parsley to garnish

- 1 cup water
- 2 tablespoons brown sugar
- 1/2 teaspoon salt
- 1/3 cup butter
