Shrimp and Macaroni Salad

Canned shrimp and egg, chopped veg
- Creamy dressing:
- 6 oz salad macaroni (1 1/3C)
- 1 3oz can pitted olives, drained and chopped
- 1 med tomato, peeled, seeded, and chopped
- 1 4 1/2oz can small cooked shrimp, drained
- 3/4 C chopped sweet pickles
- 2/3 C sliced green onion
- 7 hard boiled eggs, sliced
- salt and pepper
- 2/3 C sour cream
- 2/3 C mayo
- 2 T sweet pickle juice
- 1 T prepared mustard
- 1 t sugar
- 1/2 t Worcestershire
- 1/8 t hot pepper liquid

- Filling:
- 3 Eggs
- 1 C sugar
- 2/3 C pumpkin
- 1 tsp lemon juice
- 3/4 C flour
- 1 tsp baking powder
- 2 tsp cinnamon
- 1 tsp ginger
- 1/2 tsp nutmeg
- 1/2 tsp salt
- 1 C Pecans
- 1 C powdered sugar
- 2 3oz pkgs cream cheese
- 3 Tbsp margarine
- 1 tsp vanilla
Scallops with Lemon-Pepper Fettuccini and Sun dried Tomatoes

Saute scallops in 1/4 C olive oil over medium heat, stirring constantly until just cooked through (1-2min)
- 1 lb lemon pepper pasta
- 1 lb sea scallops, sliced
- 1/2 C olive oil, divided
- 4 cloves garlic, minced
- 1/2 C dry white wine
- 1/2 C sun dried tomatoes, drained and chopped
- 1/4 C chopped fresh parsley
- 2 Tbs capers
- 2 Tbs lemon juice
- 1/2 Tbs lemon zest

- 4 green onions, sliced

Pork Braised with Beer and Red Chili/Tacos

Mix chili powders, salt, oregano, cumin and allspice
- 1/4 C ancho chili powder (1 oz)
- 2 t chipotle chili powder or smoked paprika
- 2 t dried oregano (Mexican)
- 2 t salt
- 1/2 t ground cumin
- 1/4 t ground allspice
- 4-5 pound bone in pork shoulder roast
- 4 large garlic cloves slivered
- 1 large white onion, quartered and thinly sliced
- 2 naval oranges cut into 8 wedges
- 1/2 C Mexican beer
- Cilantro sprigs
- 1 lg red onion thinly sliced
- Juice of 2 limes
- Salt to taste
- 5 C shredded pork
- 32 Corn tortillas
- 1 1/2 lbs Monterey Jack cheese, shredded

- 3 stalkes celery, thinly sliced
- 4 green onions, sliced
- 1 11oz can mandarin orange sections, drained
- 1/4 c veg oil
- 2 T sugar
- 1 T white vinegar
- 1/2 t salt
- 1/4 t pepper
- 5 drops hot sauce
- Caramelized Almonds:
- 1/4 C slivered almonds
- 2 T sugar
