Waffle Joy of Cooking

I just use all-purpose flour, but I sift or whisk it before measuring
- 1 3/4 cups cake flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1 tbsp sugar
- 3 egg yolks
- 2 to 7 tablespoons melted butter or oil
- 1 1/2 cups milk
- 1 tsp vanilla
- 3 egg whites
Acorn Squash and Sausage Stuffing

Place squash, cut-sides down, in 13x9-inch microwaveable dish; cover
- 2 medium acorn squash, cut lengthwise in half, seeded
- 1 pkg. Jimmy Dean® Premium Pork Hot Roll Sausage
- 1/2 cup chopped onion
- 1 1/2 cups soft bread crumbs
- 1 cup packed baby spinach, chopped
- 1/2 cup dried cranberries
- 1/2 cup (2 ounces) shredded sharp cheddar cheese
- 1/4 cup slivered almonds, toasted
- 1 egg
- 2 tablespoons milk
Flame Broiled Fish Taco

- 1/2 lb fresh ono, in 2 fillets
- pinch of garlic salt and pepper to taste
- 8 corn tortillas
- 2 oz cabbage, shredded
- 1 oz shredded cheese (jack/cheddar)

- 2 limes, quartered

Bella's Vinaigrette

Place all ingredients in blender (salt and pepper to taste) and blend until creamy

- 3/4 cup olive oil
- 1/2 cup red wine vinegar

- 1/2 cup green onion, chopped

Chicken and artichokes in White wine sauce

In a pie plate or shallow dish, combine the flour, dried herbs, salt and pepper and stir with a fork to blend
- 1/2 cup all-purpose flour
- 1 tsp. herbes de provence (or a combination of other dried herbs such as basil, parsley, oregano, thyme)
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 4 boneless, skinless chicken breast halves (2 chicken breasts total)
- 2 tbsp. olive oil
- 1 tbsp. butter
- 2 cups sliced baby bella mushrooms
- 1 (14 oz.) can quartered artichoke hearts, drained

Grilled Mushroom and Ricotta Pizza

1. Heat one side of grill to medium heat and brush grate with oil
- 1 Tbsp olive oil
- 1 oz Cremini mushrooms, trimmed and sliced
