Chicken, Pork & Seafood Jambalya

1. Melt margarine in a large saucepan & saute the onions, celery, bell peppers & garlic
- 1/4 cup butter or margarine
- 1 chopped yellow Spanish onion
- 1 chopped celery stalk
- 2 chopped bell peppers
- 3 tbsp. chopped garlic
- 4 bay leaves
- 1 lb. sliced smoke sausage
- 1 lb. diced chicken meat
- 2 tbsp. seafood seasoning
- 1 tbsp. thyme
- 1 quart converted long grain rice
- 1 lb. peeled, deveined shrimp
- 1 lb. diced tomatoes in juice
- 1 1/2 quart chicken stock
Zucchini-and-Spinach Lasagna

Preheat oven to 425 degrees
- 1 (8 oz) container whipped chive & onion cream cheese
- 1 (15 oz) container ricotta cheese
- 1/3 cup chopped fresh basil
- 1 tsp. salt
- 5 medium zucchini, thinly sliced (about 2 1/2 lbs)
- 2 Tbsp. olive oil
- 1 (10 oz) package fresh spinach
- 2 garlic cloves, pressed
- 6 no-boil lasagna noodles
- 1 (7 oz) package shredded mozzarella cheese
- Garnish: fresh basil leaves
Orange Cranberry Pork Chops

Sprinkle the chops lightly with salt and pepper
- 6 center cut pork loin chops, each about 1/2" thick
- 1/4 tsp. salt
- Pepper to taste
- 1 Tbsp. vegetable oil
- 1 can (11 oz) mandarin oranges in light syrup, drained
- 1/3 cup dried cranberries
- 1/2 tsp. ground cloves (see note)
- 1/3 cup chicken broth
Spicy Oatmeal Cookies

Preheat oven to 375 degrees
- 3/4 cup chopped pecans
- 1/2 cup butter
- 1 1/2 cups sugar
- 1/2 cup molasses
- 2 large eggs
- 1 tsp. vanilla extract
- 1 3/4 cups all purpose flour
- 1 tsp. salt
- 1 tsp. baking soda
- 1 tsp. ground cinnamon
- 1/4 tsp. ground nutmeg
- 2 cups uncooked regular oatmeal
- 1 cup raisins
- Parchment paper
Pasta with Dried Plums and Pecans

Cook pasta according to package directions, then drain, reserving 1/2 cup pasta water
- 16 oz dry rotini or penne pasta
- 2 Tbsp. olive oil
- 4 tsp. fresh minced garlic
- 1 cup crumbled Gorgonzola cheese
- 1/2 cup dried pitted plums (Sun-maid), coarsely chopped
- 4 Tbsp. pecan pieces, toasted
Fresh Tomato Pizza

Heat oven to 425 degrees. Lightly grease a cookie sheet
- 1 tube (10 oz) refrigerated pizza crust
- 4 oz goat cheese
- 4 oz cream cheese (softened)
- 1 Tbsp. finely chopped fresh thyme or 1 tsp dried thyme leaves
- 6 ripe Italian tomatoes (Roma), sliced 1/4" thick
- 2 tsp. olive oil
- 1/2 tsp ground black pepper
- 1/4 tsp salt
Zucchini Oven Fries

Cut zucchini into 3" sticks
- 2 (12 oz) Zucchini
- 1/2 cup Panko bread crumbs
- 1/4 cup shredded Parmesan cheese
- 1/8 tsp. ground cumin
- 1/2 tsp. garlic powder
- 1 tsp. dried oregano
- 1/4 tsp. paprika
- 1 tsp. kosher salt
- 2 tsp. olive oil
- 2 egg whites (beaten until frothy)
Lemonade Sweet Tea

Bring 3 cups water to a boil in a 2-quart saucepan
- 3 cups water
- 2 family size tea bags
- 1 cup loosely packed fresh mint leaves
- 1/2 cup sugar
- 4 cups cold water
- 1/2 (12 oz) can frozen lemonade concentrate, thawed
- Garnishes: halved orange slices, lemon balm
