Gingered Pineapple Dip

Spoon cottage cheese into paper towel-lined sieve or colander
- 1 container (16 oz) large curd cottage cheese
- 2 Tbsp pineapple preserves, like Polaner All Fruit
- 1 tsp. red pepper sauce, like Tabasco
- 1/4 tsp. ground ginger
- 2 cups assorted sliced fruit, like pineapples & strawberries
Creamy Fruit Dessert

Stir peaches, pineapple, strawberries, kiwifruit, brown sugar and spices in a medium bowl
- 2 cans (15 oz each) peach slices, drained & chopped
- 2 cans (8 oz each) pineapple chunks, drained & chopped
- 2 cups strawberries, chopped
- 4 kiwifruit, peeled & chopped
- 1/4 cup firmly packed brown sugar
- 1/2 tsp. ground ginger
- 1/4 tsp. ground allspice
- 1 tub (8oz) Cool Whip whipped topping, thawed
Garden Vegetable Tart

Preheat oven to 425 degrees
- 1 frozen puff pastry sheet (half a 17.3 oz package)
- 2 ears fresh sweet corn
- 1 medium zucchini, thinly sliced lengthwise
- 1 pint cherry tomatoes
- 1/4 cup tomato paste
- 1/4 cup water
- 4 oz fresh mozzarella, thinly sliced
- crushed red pepper & dried basil (optional)
Bok Choy and Pineapple Slaw

- 2 cups thinly sliced pineapple
- 1 cup fresh cilantro leaves
- 3 tbsp olive oil
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
Coleslaw

- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 1/2 tsp. granulated sugar
- 2 Tbsp. vinegar
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 4 cups coleslaw mix (2/3 of a 14 oz package)
Warm Yukon Potato Salad

1. Place potatoes in a large saucepan, add water & cover
- 1 1/2 lbs Yukon gold potatoes
- Kosher salt
- 1/4 cup extra-virgin olive oil
- 1/3 cup cider vinegar
- 1 tsp. each sugar & Dijon mustard
- 1/2 cup firmly packed fresh flat parsley leaves, finely chopped
- 1 bunch (5-6) green onions, white & tender green parts only, sliced
Ginger-Orange Mocktail

Stir all ingredients together and serve over ice
- 1 (89 oz) container orange juice
- 1 (2 liter) bottle chilled ginger ale
- 1 (46 oz) can chilled pineapple juice
Roasted Green Beans with Sun-Dried Tomatoes

- 1 1/2 lb fresh green beans, trimmed
- 1/2 cup sun-dried tomatoes in oil, chopped
- 1/3 cup pine nuts
- 3 Tbsp. butter, melted
- 3 Tbsp. olive oil
- 1 tsp. salt
- 1/2 tsp. pepper
Moist Cornbread

Put 2 Tbsp. of oil in an 8x8 or 9x9 baking pan and place into oven while pre-heating to 400 degrees
- 2 1/4 cups self-rising cornmeal mix (Washington or Martha Washington brand)
- 1 can cream of corn
- 3/4 cup sugar
- 1/2 stick butter (melted)
- 1 egg; slightly beaten
- 3/4 cup milk
- 2 Tbsp. vegetable oil
Tomato Bread Salad

In large serving bowl combine tomatoes, red onion, and yellow sweet pepper
- 4 medium roma tomatoes, cut into 1" chunks
- 1/2 of a medium red onion, cut in thin wedges (1/2 cup)
- 1 medium yellow sweet pepper, cut in 1" pieces
- 1/4 cup olive oil
- 1/4 cup red wine vinegar
- 1 Tbsp. Dijon-style mustard
- 1/2 tsp. Italian seasoning, crushed
- 8 oz ciabatta or focaccia bread, cut in 1" pieces
- 1 Tbsp. olive oil
- 1 cup small fresh basil leaves
- White cheddar cheese shavings
