Corn, Cucumber & Tomato Salad

Shuck corn and cut off kernels & put in a large bowl
- 2-3 ears of corn
- 2 small cucumbers
- 3 tomatoes
- 1 small red onion
- 2 tbsp olive oil
- 1 tbsp white wine vinegar or lemon juice
- 1 small clove of garlic, minced
- 1/2 tsp salt
- basil, mint, cilantro or parsley optional
Remoulade Sauce

Combine all of the ingredients and chill
- 3/4 cup + 3/4 Tbsp. mayonnaise
- 1 1/2 Tbsp. vinegar
- 3/4 Tbsp capers, chopped
- 1/4 Tbsp. anchovy paste
- 1/4 Tbsp. chives, minced
- 2 Tbsp. onions, minced
- 1/4 Tbsp. Old Bay
- 3/4 Tbsp. Dijon mustard
Remoulade Sauce

Combine all of the ingredients and chill
- 3/4 cup + 3/4 Tbsp. mayonnaise
- 1 1/2 Tbsp. vinegar
- 3/4 Tbsp capers, chopped
- 1/4 Tbsp. anchovy paste
- 1/4 Tbsp. chives, minced
- 2 Tbsp. onions, minced
- 1/4 Tbsp. Old Bay
- 3/4 Tbsp. Dijon mustard
Chicken & Dumplings

Stir together first 5 ingredients in a Dutch oven over medium-high heat; bring to boil
- 1 (32 oz) container low sodium chicken broth
- 1 (14 oz) can low sodium chicken broth
- 3 cups shredded cooked chicken (about 1 1/2 lbs)
- 1 (10 1/2 oz) can reduced fat cream of celery soup
- 1/4 tsp poultry seasoning
- 1 (10.2 oz) can refrigerated jumbo buttermilk biscuits
Crockpot Italian Beef Sandwiches

Place beef roast in a 3 1/2-5 quart slow cooker
- 3 1/2 - 4 lbs beef roast, sirloin tip or rump roast
- 12 oz jar Italian Giardiniera, drained (less if you want it less spicy)
- 12 oz jar pepperoncini peppers
- 1 envelope Italian salad dressing (zesty Italian)
- 10 oz can condensed beef broth
Chewy Butterscotch-Raisin Bars

Heat oven to 350 degrees. Greasse a 9" square baking pan
- 1 cup flour
- 1/2 tsp. baking powder
- 1/4 tsp. salt
- 1/2 stick (4 Tbsp) butter or margarine softened
- 1/2 cup packed light-brown sugar
- 2 large eggs
- 1 cup butterscotch chips, melted
- 1 tsp. vanilla extract
- 1/2 cup raisins
- 1/3 cup semisweet chocolate chips, melted
Perfect Pumpkin Pie

Preheat oven to 425 degrees
- 1 Ready Crust Graham Cracker Pie Crust (6 oz).
- 1 can (15 oz) pumpkin
- 1 can (14 oz) sweetened condensed milk
- 2 eggs
- 1 tsp. ground cinnamon
- 1/2 tsp. ground ginger
- 1/2 tsp. ground nutmeg
- 1/2 tsp. salt
Cucumber, Basil & Peanut Salad

Whisk first 4 ingredients in a large serving bowl
- 3 Tbsp seasoned rice vinegar
- 1 tsp. Asian sesame oil
- 1 tsp. fresh lime juice
- 1 tsp. fish sauce
- 1 1/2 lbs cucumbers; sliced in half lengthwise
- 1/4 cup torn basil
- 1/4 cup coarsely chopped salted peanuts
Fried Apple Pies

1. Prepare Dough: Stir together flour & sugar
- Dough:
- 2 1/2 cups self rising flour
- 2 Tbsp granulated sugar
- 1/2 cup shortening
- 3/4 cup buttermilk
- Apple Filling:
- 1 (5 oz) package dried apples
- 2 Tbsp. granulated sugar
- 2 Tbsp. light brown sugar
- 1 1/2 tsp fresh lemon juice
- 1/4 tsp ground cinnamon
- 1/8 tsp table salt
- Cinnamon Sugar: 1/4 cup granulated sugar & 1 Tbsp ground cinnamon
- Remaining ingredient: vegetable oil
Pickled Watermelon Rind

- 1/2 small watermelon (approximately 5 lbs)

- 3/4 cup sugar
