Cream Puff Dessert

In a saucepan over medium heat, bring water and butter to a boil
- Crust:
- 1 cup water
- 1/2 cup butter
- 1 cup all-purpose flour
- 4 eggs
- Filling:
- 1 pkg (8 oz) cream cheese, softened
- 3 1/2 cups cold milk
- 2 pkg's (3.9 oz each) instant chocolate pudding mix
- Topping:
- 1 carton (8 oz) frozen whipped topping, thawed
- 1/2 cup milk chocolate ice cream topping
- 1/2 cup caramel ice cream topping
- 1/3 cup almonds, chopped
Bruchetta

Combine first 7 ingredients in a medium bowl
- 5-6 Large Roma tomatoes - seeded & diced
- 2 Garlic cloves crushed
- 1/4 Cup finely chopped fresh sweet basic
- 2 Tbsp Olive oil
- 2 Tbsp Red Wine vinegar
- 1 Tsp Salt
- 1/4 Tsp Ground pepper
- 15 Baguette slices, 1 inch each lightly toasted on one side
- 2 Tbsp Grated fresh parmesan cheese
Chicken in Thai Peanut Sauce

Combine all the ingredients EXCEPT the coconut milk in the slow cooker
- 6-7 Chicken breast cut into bite pieces
- 2 green onion, sliced
- 1 red & green pepper, chopped
- 1 tsp chili flakes
- 3/4 cup crunchy peanut butter
- 2 Tbsp. brown sugar
- 1 Tbsp. soy sauce
- 1 can chicken broth
- 1 can coconut milk
Mini Crab Cakes

- 8 ounces cream cheese, room temperature
- 1 cup Parmesan cheese, divided
- 1 large egg
- 1/4 cup sour cream
- 1 teaspoon orange zest
- 1/2 teaspoon lemon zest
- 4 teaspoons plus 4 Tablespoons chopped fresh chives, divided
- 1/4 teaspoon coarse kosher salt
- Large pinch cayenne pepper
- 6 ounces fresh lump crabmeat, picked over, patted dry, coarsely shredded
- 1-1/2 cups panko (Japanese breadcrumbs)
- 1/2 cup (1 stick) butter , melted
- Fresh chives cut into pieces
Root Beer Pudding Cookies

These taste like a root beer float in cookie form! They are so soft and delicious!
- 3/4 cup butter softened
- 3/4 cup light brown sugar
- 1/4 cup sugar
- 1 small box instant vanilla pudding mix dry, do not prepare
- 2 eggs
- 1 tsp. Root Beer concentrate
- 2 1/4 cup flour
- 1 tsp. baking soda
- 1-2 cups white chocolate chips
Linguini with Shrimp and Oven Roasted Tomato

Preheat oven to 375 degrees F
- 1 head of garlic, about 1/2 inch cut off the top
- 1 pint cherry or grape tomatoes, all red or a mix of red and orange
- 1 large clove garlic
- 1/2 teaspoon salt, plus additional
- 1/4 cup Buddy's Breadcrumbs (see recipe)
- 1/4 cup + 2 Tablespoons extra virgin olive oil, divided
- 2 Tablespoons butter
- 1 pound large shrimp (16-20), peeled and deveined
- 1/2 cup Martini dry white wine
- 1 lemon
- 1 ‑2 cups baby spinach
- 1/2 cup rough-chopped Italian parsley

Combine all crust ingredients, press into a greased 9" X 13" Pan, reserve 3/4 Cup for top
- CRUST
- 2 cups flour
- 3/4 cup brown sugar
- 3/4 cup chopped almonds
- 3/4 cup margarine

- 2/3 cups sugar
- 2 eggs
- 1/2 tsp almond extract
- 1 cup jam

Chicken Souvlaki with Tzatziki Sauce

To prepare souvlaki, combine the first 5 ingredients in a zip-top plastic bag; seal and shake to combine
- SOUVLAKI:
- 3 tablespoons fresh lemon juice
- 1 1/2 teaspoons chopped fresh or 1/2 teaspoon dried oregano
- 2 teaspoons olive oil
- 1/2 teaspoon salt
- 4 garlic cloves, minced
- 1/2 pound skinless, boneless chicken breast, cut into 1-inch pieces
- TZATZIKI SAUCE:
- 1/2 cup cucumber, peeled, seeded, and shredded
- 1/2 cup plain low-fat yogurt
- 1/2 cup sour cream
- 1 tablespoon lemon juice
- 1/4 teaspoon dried dill
- 1/4 teaspoon salt
- 1 garlic clove, minced
BEEFY ENCHILADAS

Step 1: To make enchilada sauce- Heat oil in a large saucepan over medium heat
- Enchiladas-
- 1 lb ground beef
- Jalapano Peppers minced (optional - for extra spicy)
- 1 (1.25 once) package taco seasoning
- 1 cup water
- 2 cups rice (cooked)
- 1 (16 ounce) can refried beans
- 2 cups shredded cheese (divided)
- 10 (8 inch) flour tortillas
- Cilantro, as garnish (optional)
- Red Sauce-
- 1 tablespoon olive oil
- 2 garlic cloves (minced)
- 1 teaspoon onion (minced)
- ½ teaspoon dried oregano
- 2 ½ teaspoons chili powder
- ½ teaspoon dried basil
- 1/8 teaspoon ground black pepper
- 1/8 teaspoon salt
- ¼ teaspoon ground cumin
- 1 teaspoon dried parsley
- ¼ cup salsa
- 1 (6 ounce) can tomato sauce
- 1 ½ cups water
