Finn Pancakes

Mix flour, salt, sugar, and baking powder in one bowl
- 3 eggs
- 1 1/4 cups milk
- 3/4 cup flour
- 1/2 tsp salt
- 2 tbsp sugar
- 1 tbsp baking powder
- 2 1/2 tbsp butter, melted
- 2 tbsp vegetable oil
Good Old Fashion Pancake

mix all dry ingredients mix milk, egg and melted butter mix all ingredients together
- 1 1/2 c. Flour
- 3 1/2 tsp. Baking soda
- 1 T. Sugar
- 1 tsp. Salt
- 1 egg
- 3 T. melted butter
- 1 1/4 c. milk
Garlic Bites

Preheat oven to 350 degrees
- 1 pkg Pillsbury Country Biscuits, quartered
- 2 tbsp butter (not margarine)
- 2 garlic cloves, minced
- 1 tsp Italian or Greek seasoning
- 1/4 cup parmesan cheese, grated
STUFFED ITALIAN BREAD

Preheat the oven to 350 F
- 1 Italian loaf, about 12 inches long
- 1 stick butter, melted
- 1/8 cup olive oil
- 3 tsp minced onion
- 2-3 cloves garlic, grated
- 1 tbsp dijon mustard
- 1 tbsp poppy seeds
- 3 tsp chopped parsley (add more if you wish)
- 12 oz grated cheese
Creamy Chicken Enchiladas

Directions: Preheat oven to 350°F
- Ingredients:
- Creamy Chicken Enchiladas
- yields 3 large or 4 medium sized enchiladas
- 1 large skinless, boneless chicken breast (preferably organic)
- 1/2 Tbsp canola oil
- 1/2 cup chopped yellow or white onion (about 1 medium)
- 1 large garlic clove, minced
- 1 (4 oz) can chopped green chiles
- 1/2 cup salsa verde (tomatillo salsa, or other salsa of your choice), plus additional for serving
- 1 tsp ground cumin
- 1 tsp chipotle chile powder
- 1/4 tsp cayenne
- Kosher salt and freshly ground black pepper, to taste
- 2 oz (4 Tbsp) 1/3-less-fat neufchatel cream cheese, divided
- 3/4 cup enchilada sauce, homemade or store-bought
- 3 large (burrito-sized) or 4 medium flour tortillas
- canola oil cooking spray
- 1/2 – 3/4 cup freshly grated 50% reduced-fat cheese, such as monterey jack, cheddar, or pepperjack
- 2 Tbsp chopped fresh cilantro, for serving (optional)
- 2 % plain Greek yogurt, for serving

- 1 1/2 pounds boneless, skinless chicken breasts. Cut these into small-ish cubes (bite sized).
- 1 tablespoon cornstarch
- 2 tablespoons vegetable oil
- 6 garlic cloves, minced
- 8 scallions (green onion), white and green parts separated and cut into 1 inch pieces
- 2 tablespoons rice vinegar
- 5 tablespoons hoisin sauce
- 3/4 cup raw cashews, toasted.
