Gourmet Macaroni & Cheese

Cook and drain macaroni and place in a 2 1/2 quart (2
- 2 1/2 cups macaroni
- 1/4 cup butter
- 1/4 cup flour
- 2 cups milk
- 1 tsp. salt
- 1 tsp. sugar
- 1/2 lb. processed cheese, cubed (250 g)(Velveeta)
- 2/3 cup sour cream
- 1 1/3 cups cottage cheese
- 2 cups grated old cheddar cheese
- 1 1/2 cups soft breadcrumbs
- 2 Tbsp. butter
- paprika

Stir together the flour and salt
- 2 cups all-purpose flour
- 1 teaspoon salt
- 2 eggs
- 3/4 cup milk
Pan Roasted Filet Mignon with Rum-Red Chile Sauce

- Rum-Red Chili Sauce:
- 1 (5-pound) beef tenderloin
- Salt and freshly ground black pepper
- 4 tablespoons unsalted butter
- 2 tablespoons unsalted butter
- 1 tablespoon olive oil
- 3 shallots, minced
- 1 tablespoon minced garlic
- 1 cup dark rum (recommended: Meyers's)
- 5 cups chicken stock
- 2 tablespoons ancho chili puree
- 2 tablespoons molasses
- Salt and freshly ground black pepper
Pancake

In a large bowl, sift together the flour, baking powder, salt and sugar
- 1 1/2 c. Flour
- 3 1/2 tsp. Baking Powder
- 1 tsp. Salt
- 1 Tbl. Sugar
- 1 1/4 c. Milk
- 1 Egg
- 3 Tbl. Melted Butter
Bolognese Sauce

In a hot saucepan melt unsalted butter with the olive oil, and add carrots, onions, celery, and chili pepper
- 3 tablespoons extra virgin olive oil (45ml)
- 2 tablespoons unsalted butter (30ml)
- 1 onion, finely chopped
- 2 celery stalks, finely chopped
- 3 carrots, finely chopped
- Sprig of fresh rosemary
- 200 g minced pork (0.5lb)
- 200 g minced beef (0.5lb)
- 1 cup white wine (240ml)
- 2 cups tomato sauce (see ‘5 Minute Sauce' recipe) (470ml)
- 2 dried chili peppers, crushed
- 5 basil leaves, torn
- Salt to season
Remoulade Sauce

Combine all ingredients together until well blended
- 1 cup mayonnaise
- 1 hard boiled egg, finely chopped
- 1 tbsp sour gherkins, minced
- 1 tbsp capers, drained
- 1 tbsp fresh parsley, chopped
- 1 1/2 tsp fresh tarragon, chopped
- 1 garlic clove, minced
- 1/2 tsp dijon mustard
- salt and pepper to taste
Shortbread (Mom)

Whip all ingredients together
- 1 lb. butter
- 1 cup icing sugar
- 3 cup flour
French Toast (Tammy S.)

- 2 Tbsp Sugar
- 1 Tsp Vanilla
- 1 Cup Milk
Turkey Stuffing

Directions: In a large skillet, melt butter and saute onion and celery until tender
- 1/2 cup butter
- 6 large ribs celery, diced
- 3 large onions, chopped
- 12 cups bread stuffing
- salt & pepper
- 2 tsp crumbles sage
- 3/4 tsp thyme
- 1/2 tsp rosemary
Tiramisu

- 2 Packages Lady Fingers
- 1 500 G. Tub Mascarpone
- 1 1/2 Cup Espresso
- 6 Eggs
- 6 Tablespoons Sugar
- 1 Oz Liqueur
- Semi Sweet Chocolate Shavings
