Shrimp Cracker Dip

Mix first 3 ingredients together, spread onto 12" pan
- 8 Oz. Cream Cheese
- 1/2 Cup Sour Cream
- 1/4 Cup Mayonnaise
- 2 Small Tins of Shrimp
- 1 Cup Seafood Cocktail Sauce
- 2 Cups Shredded Mozza Cheese
- 3-4 Chopped Green Onions
- 1 Diced Tomato
Curried Chicken

In a heavy pot, saute onions with oil until golden brown
- 16 skinless chicken legs with thighs attached
- 2 onions, sliced
- 1/8 cup oil
- 2 tsp cumin seeds
- 1 full head of garlic
- 1/4 cup ground ginger
- 1 can tomato paste
- 1 1/2 tsp salt
- 1 tsp fenugreek leaves
- 2 tsp tumeric powder
- 2 tsp garam masala
- 1 tsp hot chili powder
- 3/4 cup water
- 1/4 cup cilantro, chopped
Baked Italian Chicken

Pound chicken breasts. Coat with flour; dip into eggs
- SAUCE:
- 6 boneless skinless chicken breast halves
- ½ cup all-purpose flour
- 2 eggs, beaten
- ¾ cup dry bread crumbs
- ½ cup grated Parmesan cheese, divided
- 1 T cooking oil
- 2 T butter or margarine
- 2 T all-purpose flour
- 1 ¼ cups milk
- 1 tsp. Salt
- ½ tsp. dried basil
- ½ tsp. dried oregano
- ¼ tsp. pepper
- 1 can (8 oz.) tomato sauce
- 1 cup (4 oz.) shredded mozzarella cheese
Good Night Waffles

Most of the mixing for these waffles is done the night before
- 1/2 cup (125 ml) lukewarm (105°F [41°C]) water
- 1 tablespoon (15 ml) granulated sugar
- 2 1/4 teaspoons (17 ml) active dry yeast (1 yeast packet)
- 2 cups (500 ml) whole milk, warmed (about 105°F [41°C])
- 1/2 cup (125 ml) unsalted butter, melted and cooled
- 1 teaspoon (5 ml) salt
- 2 cups (500 ml) all-purpose flour
- 2 large eggs, lightly beaten
- 2 teaspoons (10 ml) pure vanilla extract
- 1/4 teaspoon (1 ml) baking soda
Mock Starbucks Lemon Cake

Lemon Cake in a cup
- Single serving in a bowl or mug:
- 1/2 tsp. baking powder
- 1 Tbsp. coconut flour
- 1 Tbsp. almond flour
- small shake of sea salt
- 1 Tbsp. Truvia, erythritol, or xylitol
- 1 Tbsp. lemon juice
- 5-6 drops of lemon essential oil (optional)
- 1 Tbsp. melted coconut oil
- 1 Tbsp. warm water
- 1/2 tsp. vanilla
- 1 egg
- Single-serve Icing:
- 1 Tbsp. cream cheese, softened
- 1/2 tsp. coconut oil or butter (I used softened
- butter for a richer flavor)
- 1/4 tsp. lemon juice
- 3-4 drops lemon essential oil (optional)
- 1/4 tsp. Truvia, erythritol, or xylitol
- 1/4 tsp. vanilla
Bacon Roast Pork Tenderloin

This beautiful pork tenderloin is wrapped in bacon and sprinkled with herbs
- 1 pound pork tenderloin
- 3-4 slices of bacon
- 1/2 teaspoon salt
- 1 tablespoon brown sugar (or your favourite sweet)
- 1 teaspoon herb or spice, dried thyme, fresh rosemary or ground cinnamon
- 1 tablespoon any mustard
- lots of freshly cracked black pepper
Beef and Broccoli Stir-Fry

1. In a bowl mix 2T Corn Starch and 2 T water and garlic powder until smooth
- 3 T Cornstarch (Divided)
- 1/2 C. Water plus 2 T Water
- 1/2 t. Garlic Powder
- 1 lb. beef
- 2 T Oil
- 4 c. Broccoli
- 1 small onion (cut into wedges)
- 1/3 c. soy sauce
- 2 T Brown Sugar
- 1 t. Ground Ginger
Corn Flake Toffee Treats

Melt toffee, cream and butter until hot liquid
- 6 Bars MacIntosh Toffee
- 2 Tbsp. Cream
- 2 Tsp Butter
- 6 Cups Corn Flakes
Skillet Chicken Souvlaki

In large bowl whisk together all the souvlaki ingredients, except the chicken
- CHICKEN:
- 2 tablespoons freshly chopped dill leaves
- 1 tablespoon chopped garlic
- 2 teaspoons Italian seasoning
- 1 tablespoon lemon juice
- 3 tablespoons olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 2 1/2 pounds split chicken breast, bone and skin removed, sliced into 1-inch pieces
- Tzatziki Sauce:
- 1 small cucumber, diced
- 2 tablespoons freshly chopped dill leaves
- 1 (8-ounce) container plain yogurt
- 2 teaspoons lemon juice
- 2 teaspoons hot sauce
- Salt and freshly ground black pepper
- Grilled Pita Bread:
- 1 (1-pound bag) refrigerator pizza dough, at room temperature

Mocha Fondue

- 4 Oz. Sweet baking chocolate
- 4 Oz. Semisweet baking chocolate
- 2/3 Cup Light cream or milk
- 1/2 Cup Powdered sugar
- 1 Tsp. Instant coffee
- 1 Tbls. Coffee liqueur
