  • 1 cup kosher salt
  • ½ cup black pepper
  • ½ cup paprika
  • ¼ cup granulated onion
  • ¼ cup granulated garlic
  • ¼ cup chili powder
  • Now add some heat if you wish ... cayenne, chipotle or your own favourite.
  • Finish with cumin, ginger, rosemary, sage; the list goes on ....... remember that these last additions should be done carefully; all of these flavours really come out in the finished product.
