Baked Gnocchi with Bacon, Tomato and Mozzarella

1. Pre-heat the oven to 200°c
- 500 g store-bought gnocchi
- 250 g bacon, chopped
- 2 garlic cloves, crushed
- 1 teaspoon smoked paprika
- 1 400g tin chopped tomatoes
- 1 tablespoon tomato paste
- handful cherry tomatoes, halved
- 1 teaspoon sugar
- 2-3 tablespoons cream/yoghurt
- large handful fresh parsley, chopped
- salt & pepper to taste
- 100 g mozzarella, sliced
Japanese Chicken Wings

Cut wings in half. Dip in slightly beaten egg and then in flour
- 3 lbs. chicken wings, tips removed
- 1 egg
- 1/3 cup flour
- 1 cup butter
- 3 Tbsp. soy sauce 45 ml
- 3 Tbsp. water 45ml
- 1 cup white sugar 250ml
- 1/2 cup vinegar 125ml
Biscuits and Gravy

Gravy Heat a large cast-iron skillet over medium-high heat

- 12 ounce tube pork sausage
- 2 tablespoons all-purpose flour
- 2 cups milk
- Freshly ground black pepper, to taste

- 2 cups all-purpose flour plus more for dusting
- 1 tablespoon baking powder
- 1 teaspoon sugar
- 1 teaspoon fine salt
- 7 tablespoons cold unsalted butter, sliced
- 3/4 cup milk
- Glaze
- 1 tablespoon heavy cream
- 1 tablespoon unsalted butter, melted
Seafood Enchiladas

Soft tortillas stuffed with delectably seasoned seafood are topped with salsa and melted cheese
- 1 - 1 lb. fresh (or frozen, thawed) small bay scallops
- - 12 oz. bag of frozen uncooked medium shrimp (peeled and deveined), thawed
- 1 - 1 cup water
- 1 - 1 block of cream cheese (8 oz.) (light is fine)
- - ½ cup sour cream
- 2/3 - 2/3 cup chopped yellow pepper
- 2/3 - 2/3 cup sliced green onion
- 1 - 1 can (4.5 oz) of crabmeat, drained, cartilage removed, flaked (I used fake crab, diced up)
- 1 - 1 garlic clove, minced
- - ½ tsp. ground cumin
- - ¼ tsp. salt
- - ¼ tsp. pepper
- 2 - 2 tbsp. chopped fresh cilantro or parsley (optional)
- 6 - 6 Flour tortillas
- 2 - 2 cups mild salsa (I think it would also be good with red enchilada sauce and/or taco sauce!)
- 1 - 1 cup grated Monterey jack cheese
- 1 - 1 cup grated medium cheddar cheese
Roasted Potato Salad with Balsamic-Bacon Vinaigrette

Directions Preheat oven to 350 degrees F (175 degrees C)
- 3 pounds baby red potatoes, cut in half
- 1/2 cup olive oil
- 1/2 cup minced garlic
- 1 tablespoon seafood seasoning
- 8 ounces bacon
- 1/4 cup balsamic vinegar
- 1/2 cup minced garlic
- salt and pepper to taste
- 1/2 cup olive oil
- 1 large red onion, cut into 1/2-inch dice
- 1 bunch parsley, minced
- 5 hard boiled eggs, roughly chopped
Bundle of Veggies

Place mushrooms, tomatoes and zucchini on a double thickness of heavy-duty foil
- 1/2 lb. medium fresh mushrooms
- 1/2 lb. cherry tomatoes
- 1 c. sliced zucchini
- 1 Tbls. olive oil
- 1 Tbls. butter, melted
- 1/2 tsp. salt
- 1/2 tsp. onion powder
- 1/2 tsp. italian seasoning
- 1/8 tsp. garlic powder
- dash pepper
Sweet & Spicy Cashew Chicken

Combine sauce ingredients and set aside

- ½ cup ketchup
- 4 tsp. soy sauce
- ½ tsp. salt
- 2 Tbsp. Worcestershire sauce
- 3 Tbsp. sugar
- 1 ½ tsp. sesame oil
- ¼ tsp. cayenne pepper
- ½ cup chicken broth
- The Rest
- 2 Tbsp. cornstarch
- ½ tsp. sugar
- ¼ tsp. salt
- 3 whole boneless, skinless chicken breasts, cut into cubes
- ¼ cup oil
- 2-3 Tbsp. minced fresh ginger
- 1 Tbsp. minced garlic
- 2 red peppers, cut in strips
- 2 carrots, thinly sliced on diagonal
- 2 cups snow peas
- 1 ½ cups cashews
- sprinkling of sesame seeds, toasted

Cut steak across the grain into 1/4 x 2 inch slices
- 1/2 pound Sirloin steak, partially frozen for easy slicing
- 2 tbsp. soy sauce
- 1 tbsp. sesame (or cooking) oil
- 2 tsp. liquid honey
- 2 tsp. sherry (or alcohol free sherry)
- 2 tsp. cooking oil
- 1 medium carrot, very thinly sliced in rounds
- 1 1/2 cups fresh bean sprouts
- 1/2 cup peeled and julienned daikon radish
- 1/4 tsp. salt
- pepper, sprinkle
- cayenne pepper, sprinkle
- 1 cup chopped fresh spinach leaves, packed
