Black Bean Skillet Cakes

How to Make It 1.) Cook onion with 1 tbsp olive oil in saute pan until lightly caramelized
- 1 small onion, finely diced
- 7 tbsp olive oil
- 2 tsp minced garlic
- 2 (15.5 oz) cans black beans, drained and rinsed
- 2 tbsp chopped fresh cilantro
- 1 egg, lightly beaten
- 1/2 tsp salt, plus more to taste
- 1/2 tsp freshly ground black pepper
- 1/2 tsp ground cumin
- 1/2 ; tsp ground coriander
- 2 tsp hot sauce
- 1/2 cup all-purpose flour
- 2 tbsp Creole seasoning
Wild Rice, Spinach and Avocado Salad with Sesame Dressing

Cook the rice and let cool
- Salad:
- 4-5 big bunches of baby spinach chopped (you can do kale as well)
- 1 1/2 cups wild rice (cooked)
- 3 avocados sliced
- 2 cups or 1 can white beans (soak overnight and then cook until soft)
- 2-3 cloves garlic minced or 2 tsp garlic powder
- salt to taste
- Dressing:
- 6 T toasted sesame oil
- 3 T rice vinegar
- 3 T soy sauce or bragg’s aminos
- Juice of 1 lemon
Pudding Shots

Directions Whisk together the milk, Irish cream liqueur, vodka, and instant pudding mix in a bowl until combined
- 1 C. milk
- 1/2 C. Irish cream liqueur (i.e. Bailey's)
- 1/2 C. vodka (i.e. Smirnoff)
- 1 pkg. instant chocolate pudding mix (4 serving size)
Garlic Cheddar Chicken

Directions Preheat oven to 350 degrees F (175 degrees C)
- 1/2 cup butter
- 4 cloves garlic, minced
- 3/4 cup dry bread crumbs
- 1/2 cup freshly grated Parmesan cheese
- 1 1/2 cups shredded Cheddar cheese
- 1/4 teaspoon dried parsley
- 1/4 teaspoon dried oregano
- 1/4 teaspoon ground black pepper
- 1/8 teaspoon salt
- 8 skinless, boneless chicken breast halves - pounded thin
Coconut Flour Pancakes 2

Combine all ingredients and stir until thoroughly combined
- 2 egg whites
- 1/4 cup coconut flour
- 1/2 cup almond milk
- 1 teaspoon vanilla
- 1/2 teaspoon baking powder
- 1/8 teaspoon salt
- 1/8 teaspoon cinnamon
- stevia (I use 1-2 packets.)
Mistletoe Meringue Cookies

Preheat oven to 325 degrees F
- 2 egg whites
- 1/2 1/2
- teaspoon vanilla extract
- 1/3 1/3
- cup sugar
- 1/3 1/3
- cup (2 ounces) mint-flavored semisweet chocolate chips, coarsely chopped
Healthy Super Bowl dip:

Mix all together
- 3 cups Baby spinach, raw
- 1 tsp Garlic
- 1/3 cup Jicama
- 1 Lemon, juice of
- 1/4 cup Scallions
- Oils & Vinegars
- 1 tbsp Olive oil
- Nuts & Seeds
- 1 cup Cashews
- 1 tbsp Coconut aminos
- Liquids
- 2 tbsp Water
Creamy Chicken Noodle Soup

Remove skin from the chicken and chop the meat
- 4 cups cooked chicken, chopped (from a store bought chicken?)
- 1 cup onion, diced
- 1 cup celery, diced
- 1 cup carrot, diced
- 1 ⁄2 cup frozen peas
- 4 (14 ounce) cans low sodium chicken broth
- 2 (10 3/4 ounce) cans condensed cream of mushroom soup (with roasted garlic)
- 2 teaspoons fines herbes (chervil, chives, parsley, and tarragon)
- salt
- pepper, tp taste
- 2 cups egg noodles, cooked
Raspberry, Coconut-Almond Cookie Bars (P3)

Pre-heat the oven to 350ºF Prepare a 9x9-inch baking pan by lining it with parchment paper
- Topping ingredients:
- 1/2 c almond flour
- 1/4 c oat flour or sorghum
- 2 TB coconut flour
- 2 TB tapioca starch/flour
- 1/2 c sweetener (I used Xylitol)
- Pinch of fine sea salt
- 1/8 teaspoon baking powder
- Pinch nutmeg
- 3 TB coconut oil
- 1/2 tsp vanilla
- 14 oz. really good raspberry jam or preserves
- (I made my own with 1 c raspberries and a tsp of tapioca pwd & tsp of xylitol: heated on stove.)
- For the crumble topping:
- 1/4 c sorghum or oat flour (I used oat)
- 1/4 c powdered Xylitol (I'm sure regular or Stevia would work fine too)
- 1/4 tsp vanilla
- 2 TB unrefined coconut oil
- For the coconut-almond topping:
- 1/2 c unsweetened flaked coconut
- 1/3 cup sliced almonds
- 2 TB unrefined coconut oil
- 1/4 tsp vanilla extract
Easy-Peasy Nacho Cheesy

Core, seed and chop the peppers and add them to a blender
- Makes about 1 1/2 cups | Prep time: 15 minutes | Total time: About 3 hours (including soaking time)
- 1 1/2 cups orange or red bell pepper (or a combination)
- 1/2 tsp. garlic, minced
- 1 cup raw cashews, soaked in water at least 2 hours
- 1 tsp. sea salt
- 1/4 cup nutritional yeast
- 1/4 tsp. turmeric powder
- 1/4 tsp. onion powder
- 1/2 tsp. dry mustard
- 1/4 cup canned green chilies
- 1/4 cup olive oil
