Hummus: Recipe and Health Benefits

4. Hummus + salsa = a spicy dip
- 1 small head of garlic (or 1/2 of a large head)
- 1 teaspoon extra virgin olive oil
- 15.5-ounce can garbanzo beans, drained
- 1/3 cup roasted red pepper (drained well if from jar), firmly packed
- 2 tablespoons lemon juice
- 2 1/2 tablespoons tahini (Tehina)
- 1/16 th teaspoon cayenne pepper
- 1/4 teaspoon salt (optional)
- 1/4 teaspoon ground black pepper
Snickerdoodles

1. Preheat oven to 350 degrees celcius 2
- 2 cups almond flour
- 1/2 tsp cream of tartar
- 1/2 baking soda
- 1 tsp powdered stevia
- 1/2 cup xylitol
- 1/2 tsp xanthan gum
- a pinch of salt
- 1/4 cup coconut oil, melted
- 1 egg
- 1 tsp vanilla
- 4 tbsp cinnamon
Samoas Bars or Cookies

Toast the coconut at 350ºF for 5-8 minutes or until golden (be careful not to burn)
- Base:
- 2 cups walnuts
- 1 cup unsweetened, shredded coconut
- 1/4 cup raw honey (or agave for vegans)
- 1 tsp pure vanilla extract
- 1/4 tsp salt
- In a food processor, pulse the walnuts and coconut together until in fine crumbs. Add in the honey, vanilla, and sea salt, and process until a moist dough forms. Press the dough into a parchment lined 9×9″ baking pan.
- Topping:
- 1 1/2 cups dates, soaked 10 minutes in hot water
- 1/2 cup full-fat canned coconut milk
- 1 tsp pure vanilla extract
- 1/8 tsp salt
- 1 1/2 cups unsweetened, shredded coconut
Sweet Potato and Sausage Soup

Heat 2 tablespoons of the oil in heavy large pot over medium heat
- You can play around with the seasonings here, to complement the type of sausage you use. Try adding chipotle pepper, smoked paprika, etc.
- Serve with a slice of sprouted grain bread with hummus to complete your Phase 3 dinner. For lunch, add apple slices with cashew butter.

- 3 Tbls. olive oil, divided
- 12 oz. fully cooked nitrate-free chicken or turkey sausage, cut crosswise into 1/4-inch-thick slices

In 3-quart saucepan, heat oil over medium heat
- 1 tablespoon olive or vegetable oil
- 2 cloves garlic, finely chopped
- 8 medium green onions, sliced (1/2 cup)
- 2 medium carrots, chopped (1 cup)
- 2 cups cubed cooked chicken
- 2 cups uncooked egg noodles (4 oz)
- 1 tablespoon chopped fresh parsley or 1 teaspoon parsley flakes
- 1/4 teaspoon pepper
- 1 dried bay leaf
- 5 1/4 cups Progresso® chicken broth (from two 32-oz cartons)
