Macadamia Almond Brittle

Combine sugar and corn syrup in a 1-1/2 qt
- 1 cup sugar
- 1/2 cup light corn syrup
- 3/4 cup coarsely chopped macadamia nuts
- 3/4 cup coarsely chopped almonds
- 1 Tablespoon butter
- 2 teaspoons vanilla
- 1 teaspoon soda
Grain Free Cinnamon Rolls

1. Mix the tapioca & coconut flour in a large bowl
- Dough:
- Servings: 8 rolls
- Preparation Time: 25 minutes
- 1 1/4 cups tapioca flour
- 1 cup coconut flour
- 1 tablespoon sugar
- 1 1/2 teaspoons xanthan gum
- 5 teaspoons baking soda
- 2 eggs
- 1/2 cup coconut oil, melted
- 1/4 cup water
- Filling:
- 3 tablespoons honey
- 2 tablespoons butter, softened
- 2 tablespoons cinnamon
- 2 tablespoons sugar
- You will need:
- Wax paper
- Extra tapioca or white rice flour for dusting

Cinnamon Apple Flautas

Heat oven to 325. Mix 2 tablespoons of sugar with cinnamon and set aside
- 3 T sugar
- 3 T butter or margarine
- 3 to 4 apples, peeled and sliced thin
- 1/2 tsp cinnamon
- 6 - 6 inch flour tortillas
- 1 tsp lemon juice

Combine dry ingredients and then add egg bacon grease and milk
- 1 cup white corn meal
- 1 teaspoon salt
- 1 teaspoon baking powder
- 1/2 cup milk
- 1 Tablespoon flour
- 1 egg
- 1 teaspoon bacon grease melted
Bean and Bacon Soup P 3

Fry bacon in large dutch oven until crisp
- 4 slices bacon, cooked
- 3 large carrots, peeled and chopped
- 2 stalks celery, chopped
- 1 small onion, chopped
- 4 cloves garlic, minced
- Salt and pepper to taste
- 1 bay leaf
- 3 (15oz) cans white beans, drained and rinsed
- 4 C chicken broth
- 2 Tblsp parsley, minced
Sorghum “Popcorn”

Sorghum is a grain; you’re actually popping the seed
- Topping variations:
- 2 teaspoons olive oil
- 1/4 cup popping sorghum
- 1/2 teaspoon cinnamon and 1 packet xylitol
- 1 tablespoon nutritional yeast
- 1/4 teaspoon sea salt plus pinch of cayenne pepper
Butter Snow Flakes

Directions Preheat oven to 350 degrees F (175 degrees C)
- 2 1/4 cups all-purpose flour
- 1/4 teaspoon salt
- 1/4 teaspoon ground cinnamon
- 1 cup butter
- 1 (3 ounce) package cream cheese, softened
- 1 cup white sugar
- 1 egg yolk
- 1 teaspoon vanilla extract
- 1 teaspoon orange zest
Sweet Ginger Cashew Chicken (P3)

Lay the chicken in a pie pan or large plate
- 2 large chicken breasts, cut into about 2 inch strips
- 1 tsp arrowroot
- 1/2 tsp salt
- 1 T coconut oil
- 2 tsp fresh minced ginger
- 1/2 cup chicken broth
- 1 T xylitol or stevia
- 1 green onion, sliced
- 1/8 tsp cayenne pepper (just a sprinkle)
- 1/3 cup raw cashews
Individual Steel Cut Oat Cups

*This recipe requires the steel cut oats to be soaked in water for 24 hours
- Before making this recipe this is what you need to do first.
- In a very large bowl, pour in 2 and 1/2 cups of standard steel cut oats. Pour in 2 and 1/2 cups of water. Let it sit for 24 hours then stir and proceed with the recipe directions.
- 2-1/2 cups soaked steel cut oats
- 1 banana, mashed
- 2 eggs, beaten
- 1 cup applesauce, unsweetened
- 1 cup milk of choice [I used 1%]
- 1 teaspoon vanilla extract
- 1 teaspoon Wisdom Natural, SweetLeaf, 100% Natural Stevia Sweetener powder*
- 1 teaspoon ground cinnamon
- 3 teaspoons baking powder
- 1/2 teaspoon salt
- 2 tablespoons chia seeds
- Optional toppings: raisins, nuts, fresh blueberries, raspberries, chocolate chips
Golden Chalice Carrot Cake

Preheat oven to 350 degrees
- 1/2 1/2 1/2 cup organic Quinoa or Amaranth Flour or combination of these
- 2 2 2 tsp. aluminum-free Baking Soda (health store)
- 2 2 2 tsp. organic Cinnamon
- 1/4 Spices 1/4 tsp. each organic Allspice and Cloves
- 1 1 1/2 1/2 virgin Coconut Oil or Unsalted Ghee, (or 1/2 and 1/2 of each)
- 1/2 1/2 1/2 tsp. Sweet Leaf Stevia or raw, powdered Stevia Leaf
- 1 1 1 cup Raisin Sauce (see bottom of page for instructions)
- 1 1 1 tsp. organic Vanilla Extract or flavor (Celiacs may not tolerate extract)
- 3 3 to cups grated Carrots (try to get sweet carrots if not adding sweetener)
- 4 4 4 Eggs
- 1/2 1/2 1/2 cup chopped organic Walnuts (optional)
