Coconut Cream Pumpkin Pie

Filling: Healthy Pumpkin Pie Recipe: Preheat oven to 400F
- Filling:
- 1 can (15oz) pumpkin or sweet potato puree
- 1 (13.5oz) can full-fat coconut milk
- 1/4 cup rolled oats (20g)
- 2 tbsp ground flax
- 1/3 cup coconut sugar or brown sugar
- pinch pure stevia, or 2 tbsp extra brown sugar
- 2 tsp cinnamon
- 1 tsp pumpkin pie spice
- 1/2 tsp salt
- 1 tbsp pure vanilla extract
- Crest:
- 1 1/2 cups ww pastry flour or all-purpose flour (almond flour may work but I have not tried it)
- 1 tsp salt
- 1/3 cup xylitol or sugar of choice
- 1/2 cup canola or vegetable oil (80g)
- 2-4 tbsp water (I used 3)
Oatmeal Bars Complete P3 Breakfast

Mix all dry ingredients and then all wet
- This was actually really good. It is just slightly sweet. The grand kids and hubby approved!
- 1.5 cups oat flour (puts oats in food processor) (grain)
- 1/2 cup whole oats (grain)
- 1/2 cup pecans (fat/protein)
- 1/2 cup unsweetened coconut (fat)
- 1 tsp cinnamon
- 1 tsp baking powder
- 1 tsp sea salt
- 6 heaping TBS xylitol or 3 TBS Truvia
- 1/2 cup almond milk (veggie/protein)
- 2 eggs (fat/protein)
- 1 tsp vanilla
- 1/3 cup melted coconut oil (fat)
- 1 small zucchini shredded (veggie)
- 1 carrot peeled and shredded (veggie)

- 3 tbsp agave or pure maple syrup
